Super simple to make, Lazy Lasagna Soup, is a warm you up meal full of italian flavors! Try this easier to make version of lasagna you can enjoy by the bowl!

Lasagna soup has been popping up everywhere and for good reason, it's delicious. Similar to Tortellini Soup, everyone is going to have their different take on it, and here's mine!
Rich tomato-y broth, lots of meat, and broken up lasagna noodles for the ultimate comfort food soup without all of the work of traditional layered lasagna.

Lazy Lasagna Soup Ingredients
- ground beef
- onion
- chicken stock
- crushed tomatoes
- lasagna noodles
- italian seasoning
- mozzarella cheese
- parmesan cheese
- ricotta cheese
- garlic
- olive oil
- salt
- pepper
How to Make Lasagna Soup
In a large soup pot, add olive oil and place over medium heat. Add diced onions and minced garlic and saute until soft, about 4-5 minutes.
Add ground beef and brown meat, breaking it up as you go. Continue to brown until cooked through. Drain extra fat, if needed.
Add crushed tomatoes, spices, and chicken stock. Bring to a boil.
Once boiling, break up lasagna noodles and place into the broth. You can break them up as small as you'd like, bite-sized pieces work well.
Simmer until noodles are cooked through.
While the noodles are cooking, prepare cheese topping. In a bowl, combine ricotta, mozzarella, parmesan, salt, and pepper. Set to the side.
Once lasagna noodles are done to your liking, ladle into bowls and scoop a small portion of the ricotta mixture on top. Serve and enjoy!
Recipe Tip
You can stir the ricotta topping ingredients (all 3 cheeses), right into the soup pot if you prefer, rather than using it is a garnish on top. Ricotta doesn't melt the most evenly, so it may be a little grainy, but it will still be very tasty!
Variations and Substations
- Add in a half a pound of italian sausage (sweet or hot) to add a lot of flavor and extra protein.
- If you don't have lasagna noodles, any noodles work. Try farfalle, rotini, or fussili, there is no need to break up these smaller noodles before adding them to the soup.
- Instead of crushed tomatoes, use a jar of your favorite marinara sauce. I suggest Rao's Homemade, it's delicious!

Ingredients

- ¼ cup ricotta cheese
- salt and pepper to taste
