Looking for an easy dinner that is both healthy and absolutely delicious? This Greek Chicken Tray Bake is the perfect one pan meal that has loads of veggies, boneless skinless chicken thighs, and greek seasonings for a flavorful meal that can be made in minutes.
Sheet pan (or tray bake) dinners are all the rage right now, and for good reason! They are easy to throw together, create very minimal dishes, and are an awesome way to get in lots of vegetables.
This greek sheet pan chicken combines a host of wonderful Greek flavors-- but feel free to experiment and make it your own! I love serving this with fresh lemon wedges, hummus, and giant spoonfuls of greek yogurt or tzatziki sauce.
This recipe calls for chicken thighs. They are flavorful and cheap, and in my opinion, the best cut of chicken to cook with! You can use any cut of chicken you would like and have on hand. See my note at the bottom of the recipe regarding changes in cooking times.

Ingredients
- boneless skinless chicken thighs
- dried oregano
- dried dill
- dried paprika
- fresh parsley
- olive oil
- lemon juice
- garlic cloves
- bell peppers
- zucchini
- red onion
- cherry tomatoes
- kalamata olives
- feta cheese
- salt and pepper to taste
How to make greek chicken tray bake
Preheat your oven to 375 degrees.
In a small bowl, combine oil, lemon juice, dill, oregano, paprika, salt and pepper. Coat chicken thighs with marinade.
Prepare your veggies to your desired size (try to keep them uniform with each other for even cooking).
Place veggies spread out on the tray or baking sheet. Try to have them in a single, even layer.
Top with seasoned chicken thighs and pour on any marinade that remains. (The juices from the marinated chicken will run down and flavor the veggies, yum!).
Bake until the chicken is cooked through and veggies are brown on the edges, around 50 minutes.
Top with olives, feta, and fresh parsley, and serve.
Use a different cut of chicken
I used boneless skinless chicken thighs and the cooking time is representative of that. If you use bone-in thighs, you may need to increase your cooking time. If you use boneless, skinless chicken breasts, you may need to decrease your time. To make sure the chicken is cooked through, use a meat thermometer and make sure the meat has reached 165 degrees fahrenheit.
More variations
- Try a different protein. Salmon, shrimp, pork, even gyro meat, would all be delicious with this sheet pan greek dish. For proteins that have a shorter cook time, bake your veggies first before adding in the meat partway through the cooking process to ensure that it is not overdone.
- Use other vegetables. One pan meals like this really lend themselves to utilize whatever veggies you may have one hand. Some other ideas to include would be canned artichokes, mushrooms, green beans, potatoes, and asparagus.
How to serve greek chicken tray bake
Serve this on its own or alongside some greek lemon butter rice. Top with homemade tzatziki and a side of freshly made hummus. I love a squeeze of lemon juice on top as well!
