Greek Chicken Tray Bake is full of fresh veggies like zucchini and tomatoes and baked with seasoned chicken thighs for an easy weeknight dinner.

Ingredients

  • 1 ½ lbs. boneless skinless chicken thighs
  • 1 tsp. dried oregano
  • 1 tsp. dried dill
  • 1 tsp. paprika
  • ¼ cup olive oil
  • 1 lemon juiced
  • 10 garlic cloves peeled and smashed
  • 2 bell peppers
  • 1 medium red onion
  • 2 zucchini
  • ¼ cup pitted kalamata olives
  • 2 tbsp. fresh parsley
  • ½ cup crumbled feta cheese
  • 1 pint cherry tomatoes
  • salt and pepper to taste

Instructions

  • Preheat your oven to 375 degrees. 
  • In a small bowl, combine oil, lemon juice, dill, oregano, paprika, salt and pepper. Coat chicken thighs with marinade. 
  • Prepare your veggies to your desired size (try to keep them uniform with each other for even cooking).
  • Place veggies spread out on the tray or baking sheet. Try to have them in a single, even layer. 
  • Top with seasoned chicken thighs and pour on any marinade that remains. (The juices from the marinated chicken will run down and flavor the veggies, yum!).
  • Bake until the chicken is cooked through and veggies are brown on the edges, around 50 minutes.
  • Top with olives, feta, and fresh parsley, and serve.
