Preheat your oven to 375 degrees.
In a small bowl, combine oil, lemon juice, dill, oregano, paprika, salt and pepper. Coat chicken thighs with marinade.
Prepare your veggies to your desired size (try to keep them uniform with each other for even cooking).
Place veggies spread out on the tray or baking sheet. Try to have them in a single, even layer.
Top with seasoned chicken thighs and pour on any marinade that remains. (The juices from the marinated chicken will run down and flavor the veggies, yum!).
Bake until the chicken is cooked through and veggies are brown on the edges, around 50 minutes.
Top with olives, feta, and fresh parsley, and serve.
