This Feta Chicken Bake is a one pot dinner with tender chicken breasts cooked with a block of salty feta, loads of cherry tomatoes, and tender ribbons of basil. Serve this on a bed of angel hair pasta for a delicious dinner in less than 30 minutes!

We are big fans of feta in our house. We always have some on hand for salads, sprinkled on top of pasta and recipes like this one! There’s just something about that salty creaminess that goes with so many things.
One of the best parts of this dish is that it all cooks together in one pan. You’ll start it on the stove just to get the chicken browned, locking in that flavor. After that, you add everything else and then bake it the rest of the way in the oven.
The result? Juicy chicken breasts, sweet cherry tomatoes that have just started to burst, and a creamy feta sauce that just needs to be stirred together. It is so delicious.
Ingredients

- Boneless Skinless Chicken Breasts: I recommend using thin cut chicken breasts or slicing them in half yourself. This will help ensure they are cooked through without drying out.
- Feta: This recipe uses a whole block of feta cheese rather than the crumbled variety. Whole feta contains more moisture and melts more smoothly into the final sauce.
- Cherry Tomatoes: Any variety will work here.
- Garlic: Lots of it!
- Lemon: A little bit of lemon juice and zest brightens the sauce.
- Basil: A lot of fresh basil adds color and flavor to the dish.
- Chicken Stock: This is included to help make a sauce from the feta mixture. It thins it out and adds another layer of flavor.
- Salt and Pepper: Use these to season the chicken before browning, and add more to taste if you feel the dish needs it.
How to Make Oven Baked Feta Chicken

Step 1. Preheat oven to 400 F.
Season thin cut chicken breasts with salt and pepper on both sides.

Step 2. Add 1 tbsp. of oil to a large deep skillet (that is also oven proof) over medium-high heat. Once hot, add chicken pieces in a single layer and brown on both sides, around 3-4 minutes per side.
Next, remove chicken breasts to a plate to the side.

Step 3. To the same skillet, reduce heat to medium and add remaining oil as well as minced garlic. Cook for one minute until fragrant.

Step 4. Add chicken stock and scrape up any bits on the bottom of the pan.

Step 5. Add chicken breasts back into the pan leaving room in the center for the block of feta. Place in block of feta whole.

Step 6. Top with cherry tomatoes, lemon juice and zest, and chopped basil leaves.
Place into a preheated oven and cook for about 15-20 minutes or until chicken pieces are cooked through an internal temperature of 165°F.

Step 7. Remove from oven and plate chicken breasts so you have room to create the sauce. Smash feta cheese with a fork to help create a sauce.

Step 8. Stir and serve all together.
Recipe Tips
- I like to use a heavy bottomed enamel dutch oven for recipes like this one because it can go from stove to oven so easily and not dirty another dish. You can find them lots of places at a variety of price points.
