- 1 ½ lbs. boneless skinless chicken breasts thin cut
- 2 tbsp. olive oil
- 8 oz. feta whole block
- 1 pint cherry tomatoes
- 4 garlic cloves minced
- 1 cup chicken stock
- ½ lemon juice and zest
- ½ cup fresh basil chopped
Preheat oven to 400 F.
Season thin cut chicken breasts with salt and pepper on both sides.
Add 1 tbsp. of oil to a large deep skillet (that is also oven proof) over medium-high heat. Once hot, add chicken pieces in a single layer and brown on both sides, around 3-4 minutes per side.
Next, remove chicken breasts to a plate to the side.
To the same skillet, reduce heat to medium and add remaining oil as well as minced garlic. Cook for one minute until fragrant.
Add chicken stock and scrape up any bits on the bottom of the pan.
Add chicken breasts back into the pan leaving room in the center for the block of feta.
Place in block of feta whole. Top with cherry tomatoes, lemon juice and zest, and chopped basil leaves.
Place into a preheated oven and cook for about 15-20 minutes or until chicken pieces are cooked through an internal temperature of 165°F.
Remove from oven and plate chicken breasts so you have room to create the sauce. Smash feta cheese with a fork to help create a sauce. Stir and serve all together.
