Ingredients

- Eggs: A full dozen for this recipe.

- Bell Pepper: Any color works, I like to do a mix. If you want to add a little spice, try adding in 1-2 minced jalapenos.

- Breakfast Sausage: I used frozen, cooked sausage links. You can use fresh breakfast sausage, but you’ll want to cook it up on the stove first before adding it to the sheet pan.
- Cheese: Shredded cheese such as monterey jack or mexican blend.
- Salt and Pepper: Season to taste.
How to Make Sheet Pan Breakfast Burritos

Step 1. Preheat oven to 400F.
Peel potatoes, and then dice peppers, onions, and potatoes into uniform sized pieces. Spread out on a baking sheet.

Step 2. Sprinkle with paprika, salt, and pepper. Drizzle on oil. Place into preheated oven for 15 minutes.

Step 3. Remove from oven and use a spatula to flip the mixture on the pan before adding bite sized sausage pieces.

Step 4. Place back into the oven and cook for an additional 15 minutes.

Step 5. During this time, prepare your eggs. Crack eggs in a mixing bowl, along with milk.

Step 6. Whisk vigorously until a pale yellow color.

Step 7. Once the 15 minutes are up, remove the sheet pan from the oven and carefully sprinkle cheese on top.

Step 8. Pour on the egg mixture and place back into the oven and bake for a final 15 minutes.

Step 9. At this point the eggs will be set and you can remove the pan from the oven.

Step 10. Slice eggs into 10 uniform pieces.

Step 11. Working in stages, add one slice of egg bake onto the middle of each tortilla.

Step 12. Fold sides of tortilla inward before rolling into a burrito.
Place on a piece of foil and wrap tightly. Repeat for each burrito.
Storage and Reheating
- To store: Wrap each burrito tightly in foil. Place in an airtight container or freezer bag and remove air before tightly sealing. Place in the fridge for up to 7 days or freeze for up to 6 months.
- To reheat: Remove foil and place on a microwave safe dish. Microwave for 3 minutes, flipping halfway through.
