These sheet pan breakfast burritos are so simple to make and you and your family are going to love having them on hand.

Using a sheet pan and baking them in stages in the oven is honestly so easy. Everything is largely hands off and the burrito filling comes out perfectly cooked and ready to be wrapped up in a tortilla. When you go to assemble them, assembly line style works really well.

I love a savory breakfast, and these keep me feeling full for hours.

Why You’ll Love These

  • Family Friendly- My boys absolutely love these. They are super easy to just pull out of the fridge or freezer and everyone loves them.
  • Perfect for meal prep- These will keep in the fridge for up to a week and in the freezer for up to 6 months. Double or triple the recipe to keep your freezer stocked without much more effort.
  • Customizable- This recipe can be adjusted to suit your tastes. Make the burritos meatless, add different veggies, or switch out the meat for bacon or ham.

Ingredients

ingredients for sheet pan breakfast burrito.
  • Eggs: A full dozen for this recipe.
  • Milk: This helps the eggs to be creamier and richer.
  • Potatoes: While you could use frozen breakfast potatoes, regular old potatoes work just fine! They only take a minute of extra work and are very cost effective.
  • Bell Pepper: Any color works, I like to do a mix. If you want to add a little spice, try adding in 1-2 minced jalapenos.
  • Onions: Diced onions add great flavor.
  • Breakfast Sausage: I used frozen, cooked sausage links. You can use fresh breakfast sausage, but you’ll want to cook it up on the stove first before adding it to the sheet pan.
  • Cheese: Shredded cheese such as monterey jack or mexican blend.
  • Salt and Pepper: Season to taste.

  • To reheat: Remove foil and place on a microwave safe dish. Microwave for 3 minutes, flipping halfway through.
