Low Carb BLT

While a BLT, or bacon, lettuce, and tomato, sandwich is a classic generally served on toasted bread, I have a little twist to share with you-- a low carb BLT! Especially in the summertime, when tomatoes are extra fresh and flavorful, this sandwich can really hit the spot.

The lettuce takes on the roll of the bread in this sandwich and I found the perfect thing to use- Baby Iceberg Lettuce. It is the perfect size and all you have to do is slice it in half lengthwise. Add on a good portion of crispy bacon, thick cut tomatoes, and the sauce of your choosing and you have yourself a delicious keto BLT.

What makes this sandwich low carb?

By taking away the toasted bread! Everything else about this recipe is already low carb, and so there isn't much else to do.

A lot of keto BLT recipes call for something called a "chaffle" which is a waffle, where the only ingredients are cheese and egg. I am personally not a fan of making swaps to make things that are meant to have carbs into not carbs, i.e. a chaffle, or keto bread. I always feel like they are subpar to the real thing-- that's just me.

The baby iceberg lettuce is so crunchy and delicious here, I didn't even miss the bread! If you can't find baby iceberg, regular iceberg lettuce, romaine lettuce, or even butter lettuce all work.

What sauce to use for a BLT sandwich?

In most cases, mayo is used (and loved!). Because I wanted to have this sandwich be extra saucy, I went with homemade buttermilk ranch. It almost made this into a portable salad situation, and it was absolutely delicious. This Avocado Lime Ranch Dressing would be a super fun and delicious sauce to add!

Ingredients

  • Baby iceberg lettuce: If you can't find baby iceberg lettuce, try regular iceberg, butter lettuce, or romaine lettuce leaves.
  • Bacon: Thick cut tastes great in this wrap sandwich, but any variety of bacon will work. Cook it to your desired level of doneness.
  • Ranch (or mayo): Make it homemade or choose a low sugar variety to ensure it is low carb.
  • Tomato: Large thick slices of an heirloom tomato are my favorite here!

Instructions

  • Trim off a very small bit of the root. Just enough, so that the lettuce head stays in tact.
  • Slice in half lengthwise.
  • On one half, add ranch and then place on bacon and sliced tomatoes.
  • Place other lettuce half on top and enjoy!
