    Crockpot Parmesan Garlic Chicken

    Crockpot parmesan garlic chicken with baby potatoes and green beans is saturated with flavor, while still being nourishing and made with whole ingredients. With minimal chopping and prep work, it's close to a dump and go dinner. You will want to add this recipe to your regular dinner rotation!

    As far as weeknight dinners go, there's nothing I love more than a good slow cooker meal. Especially all in one meals like this one, Slow Cooker Chicken and Stuffing, and Crockpot Chicken and Rice. The fact that everything is done and cooking well before the hustle and bustle of dinner time helps everything feel more at ease. Plus, you can have the kitchen cleaned before you even eat!

    This slow cooker garlic parmesan chicken has baby potatoes and green beans cooked right in, for the easiest all in one dinner. By placing the the potatoes on the bottom, and the chicken thighs and seasonings on top, the flavorful juices drip down- talk about delicious.

    Ingredient Notes

    • Oil and Butter: I like a mixture for a smooth and flavorful sauce. The fats also help add extra moisture to the dish.
    • Boneless Skinless Chicken Thighs: This is my favorite protein, especially in the crockpot. They don't dry out and are juicy. Boneless skinless chicken breasts can be used as well if you prefer.
    • Fresh Garlic: Can't go wrong with lots of garlic! I prefer fresh, but jarred garlic will work. 
    • Spices: Italian seasoning and paprika are my go tos lately, they are pantry staples and go with so many dishes. 
    • Grated Parmesan Cheese: Fresh grated is great if you have it, but the shaker kind in the green canistor is also just fine for this particular recipe. 
    • Baby Potatoes: Also called mini potatoes, pearl potatoes, and peewee potatoes. These work great because they are tiny on their own and dont require any prep work, just pour them into the slow cooker and you are good to go. If you can't locate them, regular potatoes will work as well, just dice them into bite sized pieces. 
    • Green Beans: Simply trim off the stems and add them in. They soak up the garlic sauce over time and become tender and highly flavored.

    Substitutions and Variations

    • Buffalo Wild Wings Garlic Parmesan Sauce can be used in place of the seasonings (or in addition to them for added flavor). Omit the oil, butter, italian seasoning, and paprika, add ¼-1/2 cup of parmesan garlic sauce. This is very similar to the Olive Garden Chicken Pasta that is quite popular!
    • Serve with pasta instead of potatoes to make this garlic parmesan chicken pasta. Leave out the potatoes and after the cook time is up, stir in a pound of cooked pasta and serve. I like it will short pasta like mostaccioli or gemelli. 
    • While boneless skinless chicken thighs will always be my favorite, chicken breasts or bone in chicken thighs or chicken legs will work as well. 

    Instructions

    Step 1. Add baby potatoes to the bottom of the slow cooker. If any seem larger than the rest, be sure to cut them in half so they cook evenly.

    Step 2. Add chicken thighs on top.

    Step 3. Scatter on green beans.

    Step 4. Drizzle oil over top, followed by spices, garlic, parmesan, and pats of butter. Cover with lid.

    Step 5. Cook on Low for 6 hours or High for 4 hours. Stir everything together and serve.

    Recipe Tips

    • The potatoes take the longest to cook, so make sure they are small enough or par cook them before adding the rest of the ingredients.
    • For extra flavor, brown the chicken thighs before adding to the slow cooker.

    Recipe FAQs

    Does this recipe have buffalo wild wings sauce?

    Nope! While the garlic parmesan sauce is delicious, you will not find it in this crockpot garlic parmesan chicken recipe. Instead, you will find whole ingredients to give you lots of garlic, parmesan, and italian flavors!

    Can you put frozen chicken in the crock pot?

    This is debatable. Some say no, some say they do it all the time. The issue would be if it takes too long to come up to temperature there could be room for bacteria to grow. I personally prefer to always thaw my chicken before cooking in the slow cooker.
