Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoon butter
  • 1 ½ lbs. boneless skinless chicken thighs
  • 1 tbsp. italian seasoning
  • ½ tbsp. paprika
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 ½ lbs. baby potatoes
  • 12 oz. green beans
  • 5 garlic cloves minced
  • ½ cup grated parmesan cheese

Instructions

  • Add baby potatoes to the bottom of the slow cooker. If any seem larger than the rest, be sure to cut them in half so they cook evenly.
  • Add chicken thighs on top and then scatter on green beans.
  • Drizzle oil over top, followed by spices, garlic, parmesan, and pats of butter. Cover with lid.
  • Cook on Low for 6 hours or High for 4 hours. Stir everything together and serve.

Notes

  • The potatoes take the longest to cook, so make sure they are small enough or par cook them before adding the rest of the ingredients.
  • For extra flavor, brown the chicken thighs before adding to the slow cooker.
