This is one of those recipes you'll want to keep in your back pocket to make again and again. It's quick to prepare and family friendly, while being a bit of a departure from the standard weeknight dinners like spaghetti and taco night.

What You’ll Love
- Minimal dishes: Aside from cooking the noodles, everything else is prepared in one pan on the stove which cuts down on clean up time.
- Family-friendly: My sons devoured this! The sweet and savory sauce is enjoyed by kids and adults alike.
- Well-balanced dinner: This dish has it all, noodles, protein-packed chicken, and veggies. It's a great all in one dinner.
Ingredients

- Boneless skinless chicken thighs: These add extra flavor and hold up to high heat cooking well without drying out. You can also use boneless skinless chicken breast if you prefer.
- Oil: A high heat, neutral oil like avocado oil or canola oil is best for stir frys because it has a higher smoke point so it can tolerate the higher heat without burning.
- Onion: Slice the onion thinly so that it adds flavor, but doesn’t stand out too harshly against the rest of the dish. If you’d like a mild or onion flavor, you can substitute green onions.
- Ginger: Fresh ginger adds a lot of flavor and is a staple in many stir fry dishes. Here are my instructions on how to freeze fresh ginger so you always have some on hand.
- Garlic: Fresh minced garlic is an automatic in any stir fry.
- Vegetables: You can use a mix of your favorites for this one. I did red bell pepper and chopped broccoli. I like to chop both of them on the smaller side because I find it easier to eat as they are mixed up with the noodles.
- Homemade teriyaki sauce: You can always buy store-bought, but I find homemade is so easy to prepare, and then you can control the sugar and overall flavor. This simple teriyaki sauce is a mix of soy sauce, rice wine vinegar, honey, brown sugar, and sesame oil.
- Cornstarch: This is added to the sauce while it’s simmering to thicken it up and create that silky glossy consistency characteristic of teriyaki sauce.
- Noodles: You can choose from a variety of different noodles in this recipe, from traditional linguine, to ramen noodles, to quick cooking stir fry noodles (like chow mein).
How to make chicken teriyaki and noodles

Step 1. Prepare noodles according to the packaging instructions, drain, and set to the side.

Step 2. Began by cutting up chicken thighs into bite-size pieces and place them into a small mixing bowl.

Step 3. Top with salt and pepper and stir to coat the chicken.

Step 4. Heat 3 tbsp. of oil over medium high heat in a wok or large sauté pan.
Add chicken pieces and allow to thoroughly brown, stirring occasionally. Be mindful not to stir too often as you want to leave time for the chicken to develop a crispy brown outside. Overall, it should take about 6 to 7 minutes.

Step 5. Once cooked, remove chicken to a plate to the side. To the pan, add remaining 1 tablespoon of oil before adding in sliced onions, minced garlic, julienned bell pepper, and broccoli florets.
Cook for about five minutes, stirring occasionally.

Step 6. While the veggies are cooking. Prepare the teriyaki sauce. In a small bowl, combine soy sauce, honey, brown sugar, sesame oil, and rice wine vinegar. Whisk well.

Step 7. Once the veggies are done cooking, add back in chicken, along with prepared sauce.

Step 8. In a small bowl, combine cold water and cornstarch and whisk to combine. Add to pan. Simmer on low for 2-3 minutes to allow sauce to thicken.

Step 9. Add cooked noodles to pan.

Step 10. Stir to combine with sauce and other ingredients. Enjoy!
Recipe tips
- Prep ahead will be your friend. Everything in this recipe cooks up quickly so it's best to chop your ingredients all together and then start cooking.
- Make it spicy. We like things spicy, but our kids don't. We like to top this dish with a hot sauce like sriracha or chili crisp.
- Change up the protein. Instead of chicken, you can use steak or shrimp, or any combination of the three.
