How to make chicken and feta meatballs

Step 1. To a large mixing bowl, add all ingredients.

Step 2. Using clean hands mix everything together to combine and evenly incorporate all of the ingredients.

Step 3. Form meatballs to your desired size. I suggest using a 2 tablespoon cookie scoop if you have one, to help with forming evenly sized meatballs. Repeat until all of the mixture is used up.

Step 4. To a large deep skillet, add 1 tablespoon of oil. Add chicken meatballs, be careful not to overcrowd the pan. You will most likely have to work in stages.
Cook for 4 to 5 minutes per side, until golden brown and cooked through. The internal temperature should reach 165°F.
Continue until all chicken meatballs are cooked.
Recipe tip
- Allow formed meatballs to rest in the fridge for at least 30 minutes before cooking if you have the time. This helps the flavor to develop, but it also makes them stay together better when cooking.
- If you prefer, you can bake these in the oven at 400 F for 20-25 minutes, or until cooked through. Line your baking sheet with parchment paper to prevent sticking.
