Chicken and feta meatballs have tender ground chicken, salty feta cheese, and loads of fresh herbs. They can be made on the stove top or in the oven and are great for a weeknight dinner or meal prep.

- 1 lb. ground chicken
- ½ cup crumbled feta cheese
- ½ cup breadcrumbs
- 1 egg
- 2 tbsp. milk
- 4 garlic cloves minced
- 2 tbsp. fresh parsley chopped
- 2 tbsp. fresh dill chopped
- ½ tsp. salt
- ½ tsp. pepper
To a large mixing bowl, add all ingredients.
Using clean hands mix everything together to combine and evenly incorporate all of the ingredients.
Form meatballs to your desired size. I suggest using a 2 tablespoon cookie scoop if you have one, to help with forming evenly sized meatballs. Repeat until all of the mixture is used up.
To a large deep skillet, add 1 tablespoon of oil. Add chicken meatballs, be careful not to overcrowd the pan. You will most likely have to work in stages.
Cook for 4 to 5 minutes per side, until golden brown and cooked through. The internal temperature should reach 165°F.
Continue until all chicken meatballs are cooked.
