Lazy Lasagna Soup Ingredients
- Italian Sausage: Hot or mild italian sausage, whatever you prefer.
- Marinara Sauce: Use your favorite marinara sauce, just make sure it's a good one, as it is the main flavoring agent of the broth. I love Rao's marinara sauce, it's all our household uses. It's a staple in this Chicken Parmesan with Rao's Sauce.
- Chicken Stock: Chicken Stock or Chicken Broth adds flavor to the soup. Beef broth can be used as well.
- Pasta: You can use either lasagna noodles broken into pieces or smaller pasta. I used mafalda noodles, which look like bite sized lasagna noodles. You can even use gluten free noodles if you prefer.
- Heavy Cream: Instead of using ricotta cheese, This lasagna soup recipe is made creamy from heavy cream (or half and half). If you want this recipe to be dairy free, you can omit the cream, just make sure your marinara sauce does not have cheese in it.
Variations and Substitutions
- Add in a half a pound of lean ground beef extra protein.
- Add tortellini instead of regular noodles for extra cheesy deliciousness.
- Add in 5 oz. of chopped baby spinach or kale for extra nutrients. Simply add it to the soup in the last 1-2 minutes of cooking.

How to Make Lasagna Soup
Step 1. Heat a large dutch oven over medium heat. Add italian sausage and brown meat, breaking it up as you go. Continue to brown until cooked through. Drain extra fat, if needed.
Step 2. Add marinara sauce and chicken stock and bring to a boil.
Step 3. Once boiling, add dry noodles. Simmer until noodles are cooked through.
Step 4. Once lasagna noodles are done to your liking, stir in heavy cream. Ladle into bowls and top with fresh grated parmesan cheese. Serve and enjoy!
