Ingredient Notes
- Chicken Breasts: Boneless skinless chicken breasts are easy and accessible. I have used anywhere from 2-4 chicken breasts (around 1 ½ - 2 pounds worth) in this recipe and it turns on great.
- Canned Green Chiles: Canned green chiles are a pantry staple I always have on hand. They add flavor without much heat and are great in lots of dishes like this one and in place of poblanos in white chicken chili in the instant pot.
- Spices: This recipe features a blend of cumin, paprika, and chili powder. Add more chili powder if you want this to be spicier.
- Oil: Adding a bit of oil helps the chicken breasts not to dry out, avocado oil or any neutral oil will work.

Variations
- Chicken Thighs: My favorite! Substitute boneless skinless chicken thighs for the chicken breasts for extra juicy and flavorful meat.
- Salsa Verde: In place of the canned chilis (or in addition to if you are feeling spicy), add a 16 oz. jar of your favorite salsa verde salsa.
- Cream Cheese: This recipe is gluten free and dairy free as written. Make this chile chicken recipe creamy by adding a half block of cream cheese or ½ cup of heavy cream. Simply stir in before serving and enjoy. Cream cheese is a main ingredient in this Olive Garden Chicken as well.
How to Make
Step 1. Add all ingredients to slow cooker.
Step 2. Cook on low for 5-6 hours or high for 3-4 hours.
Step 3. Shred chicken with a fork and add lime juice.
Step 4. Stir everything together and enjoy.

Not this one! Canned green chilis are generally mild (it will say so on the can). The spices added, don't add too much heat. For a spicier version, add hot canned chilis or additional chili powder.
