    Chopped Chicken Cobb Salad

    This healthy Chopped Chicken Cobb Salad features romaine lettuce topped with traditional add-ins like chicken, hard boiled eggs, blue cheese, and bacon. Ok, maybe the bacon isn't perfectly healthy BUT this salad is delicious, filling, and a great source or protein and fat, making this salad a whole meal in itself!

    This Chicken Cobb Salad recipe makes a great dinner because not only is it simple to make but it has multiple protein sources (eggs, chicken, and bacon) to keep you sustained and feeling full.

    The combination in this healthy chicken cobb provides a nice mix of crunch, salty, creamy, and fresh. Aside from the bleu cheese, there aren’t a lot of strong flavors present, allowing this salad to pair well with a variety of dressings.

    Although I don't follow any specific diets and I share recipes on all ends of the healthy eating spectrum, this cobb salad is gluten free and keto. It is very low carb and can be made dairy free by removing the blue cheese.

    You could truly add anything you wanted to a cobb salad, but here is a classic take on it.

    • Romaine Lettuce
    • Chicken Breasts
    • Bacon
    • Eggs
    • Avocado
    • Tomato
    • Bleu Cheese Crumbles
    • Red Onion

    How to Make a Chopped Chicken Cobb Salad

    Preheat oven to 400 degrees. Place chicken breasts in a shallow baking dish, coat with salt, pepper, and olive oil. Bake for 20-25 minutes.


    Hard boil eggs: In a small pot, cover eggs with water and bring to a boil. As soon as they begin to boil, cover and turn heat completely off. Set a timer for 13-15 minutes and then drain and peel. Once cool, slice eggs to desired size.


    Cook bacon, remove to a paper towel lined plate to drain and cool. Crumble bacon into bite-sized pieces.

    While eggs and chicken are cooking, begin to prep your vegetables. Rough chop lettuce, dice tomatoes, red onion, and avocado.


    Once chicken is cooked and cool, cut into bite size pieces.


    Place cut lettuce into a large bowl, and cover with all toppings and serve with dressing of your choice.

    Salad Dressing for a Classic Cobb Salad

    Most often, blue cheese dressing is paired with Cobb Salad. Ranch Dressing works great too. If you're looking for something that isn't cream based, try a red wine vinaigrette.

    If you want to take this salad up a notch, try making this easy homemade ranch dressing to serve alongside it.

    Storage

    Store any leftovers in an airtight container in the refrigerator. This salad is best eaten within a day or two for freshest taste. The peeled eggs and avocado tend to go bad after that.
