There's nothing quite like a delicious pot roast cooked low and slow in a savory broth. It is filling and comforting. It is also super easy to throw together in the morning when you have time, and dinner is already done for the day!
Many pot roast recipes cook veggies like carrots and potatoes right in the slow cooker (which you could totally do for this recipe). Ingredients
- Sirloin Tip Roast: Sirloin tip is a pretty lean cut of meat so there’s generally no trimming off fat involved.
- Red wine: This makes a rich, slightly sweet gravy for the roast. If you prefer not to use red wine, beef stock is a good alternative.
- Soy Sauce: This adds saltiness and umami.
- Onion: The onions cook down so much that they almost dissolve and this creates a sweet and savory broth.
- Butter: Butter adds some fat and flavor. Sirloin tip is a very lean cut, so adding fat elevates the au jus and helps the meat to stay moist.
- Garlic: Feel free to add extra if you're a garlic lover like myself.
- Herbs and Spices: A mix of herbes de provence and paprika. Herbes de provence is an herb blend consisting of thyme, basil, rosemary, tarragon, savory, marjoram, oregano, and bay leaf.
How to make a sirloin tip roast in the slow cooker
Step 1. To the slow cooker, add roast, sliced onions, minced garlic, butter, red wine, soy sauce, herbes de provence, paprika. Optional: Sear meat in a hot oiled skillet for 3-4 minutes per side before adding to the crockpot for extra flavor.
Step 2. Cook on low for 8 hours or until fork tender.
Step 3. Shred meat using two forks or tongs.
Step 4. Stir to incorporate with the au jus. Serve over mashed potatoes, butter noodles, or alongside crusty bread.
Recipe tips
- If you’re pinched for time, you can cook this on high for 4 to 5 hours. However, I strongly advise you to cook your beef pot roast on low for 7 to 8 hours instead this will result in much more tender meat.
- This recipe will work with many different cuts of beef, such as chuck roast and rump roast.
- You can add in carrots and mini potatoes if you would like an all in one meal. Add at the beginning of the cooking process for softer vegetables or at the 5-6 hour mark for more firmness.
- For extra flavor, sear the meat in a hot oiled skillet for a few minutes on each side before adding to the slow cooker.
