Deviled Eggs are about as classic an appetizer as they come. Everyone has their take on them, but in general they have eggs, mayo, mustard, and salt. Anything else is extra.
Well for this recipe I decided to go extra extra and kick the whole situation up a notch. Guacamole Deviled Eggs are such a fun take on this classic appetizer and to me they just make everything more delicious.
To be honest, I don't even love regular deviled eggs. These? Delicious.
How do you make Guacamole Deviled Eggs with Jalapeno?
Start by hard boiling the eggs. (Everyone has their own methods for hard boiling, but I add the eggs to the water, place it on the stove and bring it up to a boil. As soon as it starts to boil, cover it and turn the heat off. Wait 15 minutes and the eggs will be perfect).
Peel your eggs and slice in half vertically.
To a small mixing bowl, add cooked yolks, cilantro, avocado, jalapeno, salt, and shallots.
Mix well with a fork until creamy and smooth. Fill the cooked egg whites with your yolk mixture using a spoon, pastry bag, or whatever is easiest.
Optional: Top with a thinly sliced piece of jalapeno.
What consistency should the deviled egg filling be?
Creamy! This is where a nice and ripe avocado is your best friend. There are no mayo in these deviled eggs-- the avocado is what makes the filling creamy. Mix well with a fork and you should be golden. I find the lime juice helps too!
How do you get hard boiled eggs to peel easily?
Ah, the age old question. This can be so frustrating when making deviled eggs. They taste the same regardless, but it's always nice when they peel well and come out smooth. I have seen adding vinegar to the water, baking soda, and all different hacks. I can't speak to those.
My tip? Peel them warm. This gives me the most hope of keeping the process smooth and the shells coming off without pulling off lots of egg white. Once they cool, all bets are off. I also like to keep them wet by cracking them in the pot of water they boiled in. Both of these help loosen the membrane, which is often the culprit for difficult to peel eggs.

- 1 ripe avocado pitted
- ½ jalapeno minced very fine
- ½ tsp. salt
- 2 tbsp. minced shallot
- 2 tbsp. finely chopped cilantro
- 1 lime juiced
