Chicken is an easy protein that can be a part of just about any cuisine. Sometimes it can get repetitive if you are stuck in a cooking rut, and this chicken with creamy boursin sauce is the perfect solution.
It comes together quickly, with just a few ingredients needed. Everything is made in one pot, for maximum ease.
Boursin cheese works overtime by adding both flavor and creaminess. Word of warning though, you may want to double the sauce- it's that good.
Ingredient Notes

- Boursin Cheese: The star of the show! Boursin also adds thickness without using a roux, so this sauce remains gluten free. There are a few varieties of boursin cheese, I made this with the Garlic and Fine Herbes flavor, but it will truly work with any of them!
- Shallot: Finely diced shallot adds a sweetness and texture to the otherwise perfectly smooth sauce. Onion or garlic can be used instead if you have them on hand. If you have never cooked with shallots before, I suggest trying it! They add a lovely less pungent onion flavor. They are used in another favorite chicken sauce, White White and Tarragon Cream Sauce.
- White Wine: Use a quality lighter white wine like Pinot Grigio or Sauvignon Blanc. The alcohol cooks off some, but not completely. If this is a concern, chicken broth can be used as a substitute.
How to Make Chicken with Boursin Cream Sauce
Step 1. In a large, deep skillet over medium-high heat, add oil. Once hot, add chicken cutlets and brown well, around 4-5 minutes per side. Once cooked through, set on a plate to the side.
Step 2. To the same skillet, turn the heat down to medium low and add butter.Once butter is melted, add minced shallots. Saute for 2-3 minutes, until fragrant and softened.
Step 3. Deglaze the pan with white wine and whisk to combine.
Step 4.While continuously whisking, add crumbled boursin cheese.
Step 5. Continue to whisk until the sauce is smooth. If the sauce is too thick add additional wine or broth.
Step 6. Add salt and pepper to taste. Pour over cooked chicken breasts and enjoy.
Recipe Tips
- Make sure to brown the chicken cutlets very well for maximum flavor and color.
- Double the sauce, it's so good, you may want extra!
- To avoid the sauce breaking, keep heat steady in the pan over medium heat and keep stirring. If the sauce does happen to separate, add a tablespoon of wine or broth and whisk vigorously.
How to Serve Boursin Chicken

For a simply veggie side, pair with peas, crispy garlic green beans, or roasted broccoli. This is great with a simple salad as well.
Leftovers and Storage
Store any leftovers in the fridge in an airtight container for up to 4 days. Reheat on the stovetop or in the microwave.
I don't recommend freezing this recipe, as cream sauces generally do not freeze well.
