Easy and Cheesy, Cheeseburger Stuffed Peppers have colorful bell peppers stuffed with a seasoned ground beef and rice filling and are topped with melted cheese. This twist on a classic burger is a family favorite weeknight dinner.

Stuffed peppers are such a great dinner option as they can be made ahead and add extra veggies with each serving having a whole bell pepper.

Ingredients
- Bell peppers: Use any color you like, green, red, orange, or yellow peppers. Choose peppers that are similar in size to each other so they bake evenly. For a hint more spice, you can use large poblano peppers when making this dish, like seen in this Spicy Chicken Stuffed Poblanos Recipe.
- Ground beef: I like to use a ground beef with some fat in it, like an 80/20 or 85/15 blend, as it adds more flavor. You could use lean ground beef, ground turkey or ground venison if you prefer a leaner meat.
- Spices: Paprika, onion powder, and garlic powder are classic burger seasonings, and are added to the ground beef mixture for flavor.
- Worcestershire Sauce: This sauce may be hard to say, but it's an important ingredient! It's a great compliment to beef.
- Ketchup and Mustard: Wouldn't be a burger without them.
- Shredded Cheese: Monterey Jack or sharp cheddar cheese are classics, but really any shredded cheese will work here. Pepper jack would give a nice hint of spice.
- Toppings: Top these burger stuffed peppers with whatever you like on your burger, like shredded lettuce, pickles, more ketchup and mustard, big mac sauce, etc.

Variations
If you prefer to make these cheeseburger stuffed peppers keto, you can sub in cauliflower rice for the cooked rice. There is no need to cook it first, simply add it when you add your cheese to the meat filling.
How to Make cheeseburger stuffed peppers
Step 1. Preheat oven to 375 degrees F. Cut carefully cut tops off of the peppers and discard, along with any seeds. Set prepped peppers into a baking dish.
Step 2. In a large skillet over medium heat, add oil. Once hot, add ground beef. Brown meat, breaking it up as you go, until partially cooked through.
Step 3. Once the meat is mostly cooked, add diced onion. Cook an additional 5 minutes, until meat is cooked through and the onions have softened.
Step 4. Add worcestershire sauce, spices, ketchup, and mustard, Stir to combine.
Step 5. Add cooked rice and cheese (reserving ½ cup of cheese for topping). Stir to combine.
Step 6. Stuff peppers to the top of each, until all the filling is used up.
Step 7. Top each pepper with the remaining cheese and place in the oven.
Step 8. Bake for 30 minutes, or until the peppers have softened and the cheese is melted.
Top Tips
- If you prefer a softer pepper, you make want to par cook the empty peppers for 10-15 minutes before stuffing them.
- This filling makes enough to fill approximately 4 large bell peppers.
- This recipe easily doubles or triples, making it great for meal prep or for large families.
Easy Big Mac Sauce
While optional, this easy homemade big mac sauce is totally delicious and really takes these peppers to the next level. It is also a great dipping sauce for fries and onion rings.
- ¼ cup mayo
- 1 tsp. mustard
- 1 tbsp. relish sweet or dill
- 1 tbsp. grated onion
- ½ tsp. paprika
- ½ tsp. onion powder
- ½ tsp. garlic powder
- ½ tbsp. white vinegar
Combine all ingredients and let sit in the fridge for 30 minutes for the flavors to develop before enjoying.
