This is one of those recipes that is equal parts fancy and simple. There isn't a lot of prep work involved, and everything cooks up quickly. But there is something inherently "special" about filet mignon/beef tenderloin, isn't there?
What are Beef Tenderloin Tips?
Beef tenderloin comes from the the back half of the cow, underneath the ribs. This cut is sliced into steaks to create filet mignon. When this happens, there are pieces from the tail of the steak or other trimmings that are cut off to create more uniform filet mignon. Those discarded pieces are still tenderloin and are delicious quality and perfect using as tenderloin beef tips.
Beef tenderloin is extremely tender when cooked correctly. However, because it does not contain a lot of fat, it can be tough if it gets overcooked. Because of this you don't want to cook beef tenderloin to well done, medium rare or rare are best!

What You Will Need
- Beef Tenderloin Tips- You can buy these precut or prepare them yourself from a beef tenderloin or filet mignon steaks. The tips should be cut to around 1 inch cubes.
- Garlic- Fresh minced garlic adds lots of flavor.
- Butter and Oil- I like to do a mixture of both here. This helps to give you the flavor of the butter with the ability to cook at a higher heat from the oil.
- Flour- Coating the beef tips in flour isn't completely necessary but it helps with creating a crust on the outside of the steak and it also helps to thicken the sauce once the beef stock is added.
- Beef Stock- This creates a sauce/gravy out of the pan drippings created from searing the meat. Red wine could be used as a substitute.
How to Prepare Beef Tenderloin Tips
Step 1. Start with room temperature beef tenderloin tips. If you cannot find the tips pre-cut you can buy beef tenderloin or filet mignon and slice it into 1 inch pieces. Place beef tenderloin tips on a paper towel and pat dry to remove excess moisture.
Step 2. Sprinkle on flour, salt, pepper, and italian seasoning, and stir to evenly distribute over the meat until it is fully coated.
Step 3. Heat cast-iron skillet over medium high heat and add oil. Once hot, add beef pieces and sear until evenly browned using tongs to flip the tips as needed to make sure both sides are browned. This should take about 5-7 minutes total.
Step 4. Once browned set on a plate to the side. To the same skillet, add butter and melt add minced garlic. Cook for 1-2 minutes until fragrant.
Step 5. Add beef broth and use wooden spoon or spatula to scrape up any bits on the bottom of the pan. Simmer to reduce the sauce by half about 2 to 3 minutes.
Step 6. Add beef tenderloin tips back to the pan and stir to coat with the sauce.
Storage
Store any leftovers in an airtight container in the fridge for up to 4 days.
