These easy savory mashed sweet potatoes with French herbs are a classic that we have at all of our family gatherings on my dad's side. Based on how rich and delicious they are, you would never know how simple they are to prepare! With only four ingredients, these are a cinch to put together. You could even make these a day ahead, and then reheat them in the oven when you are ready to serve them.

Ingredient Notes
- Sweet potatoes: I used 3 quite large sweet potatoes, sweet Potatoes can vary a lot in size, so you may want to go by weight instead. Around 3-4 lbs.
- Butter: Butter makes these mashed sweet potatoes creamy and rich.
- Sea Salt: I like a bit of flaky sea salt to really up the flavor of this simple side dish.
- Herbes de Provence: Herbes de Provence is a dried herb blend that typically contains fennel, marjoram, parsley, rosemary, tarragon, and thyme. You will sometimes find other ingredients added such as lavender, savory, mint, chervil, oregano, sage, basil, or bay leaves. Variations and Substitutions
- If you want, you can omit the herbes de provence and simply go with the sweet potatoes, butter, and salt. I recommend you try it though, it makes the best sweet potato mash seasoning!
How to Make
Step 1. Preheat oven to 375 degrees F and bake sweet potatoes on a cookie sheet for 45 minutes or until you can easily pierce them with a fork.
Step 2. Let cool long enough to be handled, and then peel off the skins.Place the potatoes in the bowl of a stand mixer and add 4 tablespoon of butter cut into chunks. Add salt and herbes de provence.
Step 3. Whip until everything is combined.
Step 4. In a buttered baking dish, pour potatoes and then bake at 375 for 10 minutes.
Recipe Tips
- There is no need to peel your sweet potatoes ahead of time! This will simply add to the prep time and it is unnecessary. Simply place your sweet potatoes on a baking sheet and cook them in their skins. Once they are cooked through and cool enough to handle, peel back the potato skin. It will come off very easily. This method also works for peeling regular potatoes without a peeler.
- If you prefer to boil your sweet potatoes, rather than roasting them, you can. In that case, you will want to peel them first. If you cut the sweet potatoes into small chunks, they will take only 15-20 to cook when boiled on the stove.

- Mash sweet potatoes by hand with a potato masher for a more rustic, lumpy consistency.
- I love making this dish ahead of time come Thanksgiving, because on Thanksgiving day, the oven is in high demand. I heat these whipped sweet potatoes up in a casserole dish at 375 once the turkey is done and they are warm and ready to go in less than 20 minutes.
