What are wheat berries?

While wheat itself is incredibly popular, especially in the United States, whole wheat berries themselves are less common. A wheat berry is simply a whole grain kernel that only has had the outer husk removed. The wheat berry contains the bran, germ, and endosperm. All wheat products, like wheat flour, come from wheat berries. Wheat berries are a whole grain that is in high fiber.

Taste and Texture

Wheat berries have a nutty taste and a firm texture. They are great for using in both sweet and savory dishes. Even when cooked, this grain remains firm and chewy. 

What you'll need

How to make wheat berries in the instant pot

Step 1. Sort through your wheat berries and remove any bad ones or other debris.

Step 2. Add wheat berries to the instant pot and cover with water. Add salt, if desired. Place pressure cooker lid on top and make sure the nozzle is in the sealing designation. Set to high pressure for a cook time of 35 minutes. It will take several minutes to come up to pressure.

Step 3. After the cook time is up, carefully quick release to let out the pressure. Remove the lid and drain any remaining water.

Step 4. Use cooked wheat berries immediately or store in the fridge for later use. 

Recipe tip

You can double this recipe if you want (wheat berries are a great grain for meal prepping).

A good rule of thumb for liquid to wheat berry ratio is 3 parts liquid to 1 part wheat berries.

What are wheat berries used for?

Wheat berries are great in salads, soups, and as whole grains for a side dish. They can even be ground up to create your own whole grain flour. 

  • As a replacement for barley in Beef and Barley Soup
  • Added to your morning oatmeal for extra fiber and nutty flavor
  • On top of a yogurt parfait

Storage

Store cooked wheat berries in an airtight container in the fridge for up to 5 days. Cooked wheat berries can also be kept in the freezer for several months and thawed as needed.
