Frozen Banana Peanut Butter Bites

These frozen banana peanut butter bites with chocolate are a 5-ingredient snack that are not only easy to make but can be kept in batches in the freezer for a quick treat whenever you need!

Peanut butter and bananas just seem to go together, don't they? I think we have all gone to a restaurant and seen some version of the "elvis" sandwich on the menu. Well now you can snack like the king!

Now the true "Elvis" sandwich is made with peanut butter, bananas, and bacon. But I thought I would keep these simple and go with banana peanut butter chocolate instead.

Recipe Tips

Before you get started, here are some key things to make your life easier when making these banana chocolate peanut butter bites.

Coconut oil is a must. TRUST ME. I tried to make these without coconut oil and it was a straight up disaster. It was a hot (and cold) mess. I may have yelled. The coconut oil is an absolute must here to keep the chocolate thin enough to coat the banana and to keep it from immediately hardening the second you put the frozen banana in the melted chocolate. Trader Joe's has a great coconut oil that is triple filtered and therefor very mild in flavor.

Work quickly. You are racing against the temperatures here. You want the bananas with peanut butter to stay frozen and the chocolate to stay melted during the coating stage. Have your chocolate melted and ready to go and your station set up, before you take the banana bites out of the freezer. Bananas can get a little gooey too, after being frozen so thats another reason to work quickly. Luckily there are no seeds in bananas that you find at the grocery store.

Use a fork to flip. Our hands are warm and they can melt the frozen banana bites all too quickly. Try using a fork for the majority of the chocolate coating stage to reduce the amount of times you are touching the bananas.

Ingredients

Instructions

Slice bananas into 1-inch pieces and place them on to a clean baking sheet.

Top each piece of banana with peanut butter, placing peanut butter on banana in equal amounts. This may get a little messy, so work slowly.

Gently place a second banana piece on top of the peanut butter covered banana. Place in the freezer.

These have a tendency to move around a bit, so I suggest checking them half way through and making sure they are all lined up.

After two hours, check to make sure they are frozen.

If the frozen peanut butter banana bites are ready, melt chocolate in the microwave.

Remove melted chocolate from the microwave and stir in coconut oil. It will be thinner and glossy.

Using a fork, quickly coat each banana bite completely with chocolate. Place coated bites back on to the baking sheet.

While the chocolate is still melted, sprinkle with just a tiny bit of flaky sea salt.

Place the chocolate covered bites back in the freezer one more time. Freeze for 1 hour.

Tip for freezing sliced bananas

When you freeze the peanut butter with banana, these can have the tendency to stick to the pan. Your best bet it to use a non-stick baking sheet, parchment paper, or a silicone baking mat to avoid any problems.

Variations

Here are some fun ways to switch up these banana chocolate bites!

  • Add honey. Add a drizzle of honey on top of the banana and peanut butter and then top with the second banana slice. Freeze and cover with chocolate.
  • Add Bacon. Place a piece of crispy bacon on top of the banana (or in between with the peanut butter step) and then freeze. Top with chocolate as normal.

Storage

To store these peanut butter banana bites, keep in an airtight container in the freezer for a few months.

If you would like, you can keep them in the fridge for a day or two, but any longer than that and you will end up with a mushy banana.

Bonus! Frozen Banana Peanut Butter Bites for Dogs

Just thought I would throw this in their for those of us with furry friends! These frozen peanut butter and banana bites are a great dog treat-- simply forgo the chocolate step.

Make these frozen banana bites as usual, and stop after the first freeze. These frozen mini banana peanut butter sandwiches can double as your pups favorite healthy snack.
