We have been on a chicken salad kick lately, that's for sure. From making lots of Chicken Salad Chicken copycat recipes, such as the Classic Carol, to our family favorite Lemon Tarragon Chicken Salad, we just can't get enough!
Chicken salad is high protein, great for spring/summer, and simple to prep and make ahead. What's not to love?
I love capers, they are an easy way to add saltiness and a bit of acidic taste to any dish, from classic chicken picatta to this pesto orzo salad.
Think of this dish as a chicken picatta chicken salad!

Ingredients
- Cooked Chicken- You can use shredded rotisserie chicken, canned chicken, chicken breasts, or my personal favorite, chopped up chicken tenderloins.
- Lemon Juice and Lemon Zest- This adds a nice brightness to the dish, and the lemon zest really enhances the lemony flavor.
- Capers- Feel free to use more or less based on your personal preferences.
- Fresh Dill- Fresh herbs are so lovely in chicken salad, and one of my favorite ingredients to add. If using dried, make sure to use less, as it is more concentrated in flavor.
- Celery- For a bit of crunch.
- Green onions- I like them here, as they give a softer onion taste and let the other flavors shine through.
- Mayonnaise and sour cream- Using a mixture of the two gives the best taste and texture. I suggest Duke's mayo for all of my chicken salads. You can use greek yogurt in place of sour cream as well.
- Spices- I like a simple blend of salt, pepper, garlic powder, and onion powder.
How to Make Caper Chicken Salad
Step 1. Chop up chicken finely and add to a mixing bowl along with drained capers, finely chopped celery, chopped green onions, mayo, sour cream, spices, lemon juice, and zest.
Step 2. Mix well to thoroughly combine the ingredients. Refrigerate before serving.
How to Serve
Serve chicken salad on its own, on a lettuce wrap or tortilla, or on a sandwich with your favorite toasted bread.
I love it alongside some fresh fruit as well.
Storage
Store leftovers in an airtight container in the fridge for up to 4 days. Give it a good stir before enjoying.
I do not suggest freezing chicken salad.

- ½ cup mayonnaise
- ¼ cup sour cream

- 2 tbsp. capers
- 1 tbsp. fresh dill chopped

- 2 green onions chopped
- ½ tsp. salt
- ½ tsp. onion powder
- ½ tsp. garlic powder
- ½ tsp. black pepper
