Chicken BLT Salad

Ripe red tomatoes, fresh sourdough bread made into croutons, and bleu cheese top a bed of crisp romaine lettuce for this Chicken BLT Salad.

Today I’m bringing you a super simple salad that takes just about ten minutes to prepare and is a crowd pleaser. I mean, who would say no to bacon! Plus it’s a fun way to enjoy the flavors of a BLT in a new way.

I love enjoying salads in the summer because not only are they a lighter option, they also highlight delicious produce that is often in its prime this season. Tomatoes for example are juicy and ripe as can be this time of year!

To capitalize on how quick this salad can be made, start by preheating your oven and chopping up the sourdough to make croutons. 

Then start your bacon.

While those two are cooking, began chopping and plating the remaining ingredients. By having a few things going at a time, you truly can get this salad done in ten minutes. 

Ingredients

  • Romaine Lettuce: Any lettuce would work here, like iceberg or butter lettuce. Make sure to chop it well to ensure no big pieces.
  • Cooked chicken: Cube it or shred it. A premade rotisserie chicken makes this step super easy, or you can bake the chicken ahead of time or make Instant Pot Shredded Chicken Breasts (Frozen or Fresh).
  • Red onion: Slice it thinly to ensure the flavor isn't overpowering.
  • Cooked bacon: This recipe only uses a few ingredients, so you want to make everyone count. I suggest making fresh bacon (not store bought bacon bits) for this reason.
  • Bleu cheese: This is a bit of a strong flavor, some love it, some don't. Other great options would be crumbled feta, gorgonzola, or white cheddar crumbles.
  • Sourdough bread: Making croutons is a great way to use up leftover bread that may be going a bit stale. It's super quick to do.
  • Tomatoes: I use romas, but any fresh tomato will work.

How to Assemble

  • Preheat oven to 400 degrees. Cube sourdough bread into bite-sized pieces and place on baking sheet. Place in oven and allow to crisp up, about ten minutes.
  • While the bread is cooking, prepare your bacon according to the packaging instructions.
  • Chop romaine and place down in serving dish.
  • Top with tomatoes, bleu cheese, red onion, sourdough croutons, and crumbled bacon.
  • Serve with your favorite salad dressing, my favorite is ranch.

Additional Topping Ideas

  • Avocado
  • Sub feta for bleu (some people dislike bleu cheese, and feta would be a good substitute)
  • Hard boiled eggs

Ingredients
  

  • 6 cups Romaine lettuce chopped
  • 2 cups cooked chicken cubed
  • 1 small red onion thinly sliced
  • 5 slices cooked bacon crumbled
  • ⅓ cup bleu cheese crumbles
  • 2 slices sourdough bread
  • 2 medium tomatoes sliced

        Balsamic or ranch! The flavors could lend themselves to a lot of dressing pairings.

    Totally going to make this today! Looks so good on a hot summer day! Going to use fresh mozzarella i bought the other day! Not a fan of bleu cheese.
