BLT Chicken Salad has tender cooked chicken mixed with ripe cherry tomatoes, onions, and salty bacon in a seasoned mayonnaise dressing for a tasty spin on a classic BLT sandwich.

Today I’m bringing you a super simple salad that takes just about ten minutes to prepare and is a crowd pleaser. I mean, who would say no to bacon! Plus it’s a fun way to enjoy the flavors of a BLT in a new way.
BLT’s generally consist of bacon, lettuce, and tomato on toasted bread. You can serve this chicken salad on a bed of butter lettuce or with toasted bread or a croissant.

Ingredients
- Chicken Tenderloins: Chicken Tenderloins are my go to for chicken salad. They only take a few minutes to cook and they give such a nice texture to the salad. If you prefer, a rotisserie chicken makes this step super easy, or you can make Instant Pot Shredded Chicken Breasts (Frozen or Fresh).
- Red onion: Dice it finely to ensure the flavor isn't overpowering.
- Green onion: For another layer of flavor, as well as a bit of green color.
- Cooked bacon: This recipe only uses a few ingredients, so you want to make each one count. I suggest making fresh bacon (not store bought bacon bits) for this reason.
- Tomatoes: This recipe uses cherry tomatoes that have been halved but any fresh tomato will work.
- Mayonnaise: My favorite is Duke’s mayo.
- Seasonings: A blend of garlic powder, onion powder, salt, and black pepper.
How to Make BLT Chicken Salad
Step 1. To cook chicken, bring a pot of water to a simmer over medium heat. Add chicken tenderloins and cook for 7-8 minutes, until just cooked through. They will reach 165 F.
Remove chicken tenderloins from the water and use a food processor to shred chicken or dice by hand with a sharp knife. Add chicken to a mixing bowl.
Step 2. Add cooked and crumbled bacon, along with halved cherry tomatoes, diced red onion, diced green onion, mayonnaise, and seasonings.
Step 3. Mix well to ensure everything is evenly coated.
Step 4. Refrigerate before serving.
Recipe Tips
- Allowing the chicken salad to sit in the fridge for at least an hour (or even overnight), helps all of the flavors to mix together and gives a richer taste to the chicken salad.
- A food processor helps chop everything small and consistently to give a restaurant-style chicken salad.
