Crockpot Creamy Broccoli Chicken is an easy comfort food dinner made in the slow cooker. Tender pieces of chicken and broccoli are nestled in a creamy, cheesy sauce. Serve over rice for a delicious complete meal.

It may be summer, but I’m a crockpot lover any time of the year. The ease of making dinner early and having it ready to go while you go about your day is just as helpful for busy summer months as it is during the cozy fall and winter seasons.

This broccoli cheddar chicken takes less than 5 minutes of hands on time to prepare, making it a go to for weeknight meal in our house. It is rich and creamy from the shredded cheddar and cream cheese, but made lighter with a bit of greek yogurt! The chicken and broccoli get incredibly tender from slow cooking and each bite is better than the last.

Ingredients

- Chicken: I used boneless skinless chicken breasts in this recipe, but feel free to use chicken thighs or chicken tenderloins.
- Broccoli: You can use fresh or frozen broccoli florets. I suggest cutting them to bite-sized pieces before adding them to the crockpot for ease when serving.
- Shredded cheese: I used monterey jack, but you can use shredded cheddar, mexican blend, or even pepper jack.
- Cream Cheese: For making rich sauce to coat everything.
- Greek Yogurt: This adds some creaminess too, as well as a bit of tang. It allows the sauce to be lighter without sacrificing flavor. You can also use sour cream, if you prefer.
- Spices: A blend of garlic powder, onion powder, paprika, and salt.
- Aromatics: Onions and garlic add flavor to this simple meal.
How to Make Broccoli Cheddar Chicken in the Slow Cooker

Step 1. Cut chicken into bite sized pieces and place into the bottom of the slow cooker.

Step 2. Top with spices, minced garlic, and diced onions.

Step 3. Add broccoli florets.

Step 4. Add cream cheese and shredded cheese before placing the lid on top.

Step 5. Cook on LOW for 6 hours or HIGH for 4 hours.

Step 6. After the cook time is up, give it a good stir to incorporate everything before serving over rice.
Recipe Tips
- You can add the broccoli halfway through if you prefer the florets to be more crisp.
- Feel free to add cooked rice directly to the slow cooker for a complete crockpot chicken and rice with broccoli meal.
