Red Robin Copycat Ensenada Chicken Platter

This classic Red Robin dish, the Ensenada Chicken Platter, features spicy, juicy chicken breasts coated with a homemade spice blend and a simple southwest salad for a quick and healthy dinner.

Looking for more copycat recipes? Try Olive Garden's Steak Gorgonzola Alfredo, Chick-Fil-A's Avocado Lime Ranch Dressing, or Potbelly's Dream Bars. One of my favorite copycats to make at home are Chicken Friand from La Mad.

This dish is one of my favorites that Red Robin does. My mom always orders it, and I thought it would be great to learn how to make it at home.

The grocery store has several different bagged salad options and anything "southwest" pairs perfectly with the spiced chicken. It will be almost exactly the same as what Red Robin serves. If you want to be more true to form of the Red Robin dish, try something like jalapeno ranch or spicy ranch. This will be closer to the restaurant's "baja ranch."

To serve, plate it with some salad, chicken breasts, salad dressing, salsa, and a wedge of fresh lime.

This spice blend works perfectly to coat the chicken, and depending on how many chicken breasts you make, you may have extra. Don't throw it out! It's a great mexican-style spice blend that would be great for tacos and fajitas. I used it in a classic chili recipe and it was wonderful!

Ingredients
  

  • 2 tsp. salt
  • 3 tbs. chili powder
  • 2 tbs. cumin
  • 2 tbs. paprika
  • 1 tbs. onion powder
  • 1 tbs. garlic powder
  • 1 tbs. oregano
  • 4 thin cut chicken breasts
  • 1 tbs. olive oil
  • Ranch lime wedges, salsa (for serving)
  • Josie's Organics Southwest Salad Mix

Instructions
 

  • Combine all spices in a bowl and mix well.
  • Coat 4 thin cut chicken breasts liberally in spice mix.
  • In a large frying pan, heat olive oil on medium heat. Pan fry chicken until cooked through, about 4-5 minutes per side.
  • Serve with Josie's Southwest Salad, salsa, ranch, and lime wedges.
  • Store any remaining in an airtight container.

      I like the variety in that salad mix. I’ve been buying other brands and they seem to be 90% cabbage. That’s ok but more like a slaw than an actual salad! I’ll look for this one! Thanks for idea!

    was looking for a spice blend to use with taco meat chicken or beef and I have ingredients on hand havnt tried red Robin not. in my area can make at home now just. no cilantro bad word with grandpa

    I love the Chicken Ensenada platter at Red Robbin. Unfortunately none in our area. I have tried several supposedly copy cat recipes, but have found them too spicy (heat). I am looking for a recipe with the flavor, but not the heat. When I try this recipe, should I use less chili powder?

      Hi Charlene! This isn't too spicy, but I would definitely try halving the chili powder and see where the spice level is at that point. You can always adjust later, and it will still be very flavorful even without the chili powder.

      Barbara,

      Was the chicken meat dry or the outside? If the meat itself was dry, maybe cook for less time next time (it can vary on thickness!). If the outside is too dry, you could add oil when cooking or a squeeze of fresh lime juice!

        The inside, i think i cooked it too long, i took what i had and cut it up, tossed it with some more seasoning and use it on my salads for lunch 😊

    My husband love this platter at Red Robin. I decided I wanted to give this a try for dinner tonight for him. After the first bite he said that this recipe was a keeper. When the meal was all complete, he stated that I nailed it.
