Green Bean Tater Tot Casserole with Ground Beef

This Green Bean and Tater Tot Casserole is a one pan comfort food dish that your family with love! Seasoned ground beef, fresh green beans, corn, and lots delicious ingredients like shredded cheese, cream of mushroom soup and sour cream. All topped with crispy tater tots and baked in the oven until bubbly.

I love a good casserole dish. Everything is all together in one pan, making it easy to prepare ahead of time and stick in the fridge to be baked later. Dishes like taco chicken casserole and rice stuffed zucchini casserole are favorites in our house. For a non baked casserole, we love this old fashioned goulash recipe.

This tater tot casserole with green beans and corn is about to become a new favorite in your house-- I know it is in ours. A hearty dish with vegetables?! Creamy and cheesy?! Sign me up! Plus, you can never go wrong with tater tots, they make me feel like a kid again, and they are just plain tasty.

Ingredients

  • Lean ground beef
  • Fresh green beans
  • Onion
  • Canned Corn
  • Cream of mushroom soup (I used campbell's)
  • Sour Cream (or Greek yogurt)
  • Shredded cheese
  • Frozen tater tots
  • Olive oil
  • Worcestershire Sauce
  • Salt
  • Pepper
  • Garlic Powder

How to Make Hamburger Green Bean Tater Tot Casserole

Trim green beans into bite-sized pieces and dice onions into a small dice.

In a large skillet, heat oil over medium heat. Brown ground beef, breaking it up as you go. When the beef is about halfway cooked (still some pink), add in diced onions and green beans. Saute for another 7-8 minutes, until the green beans and onions begin to soften.

Remove the pan from the heat and add in the sour cream, can of cream of mushroom soup, can of corn (drained), half of the shredded cheese, salt, pepper, and garlic powder. Stir to combine.

Spoon tater tot green bean casserole filling into a 9x13 oven safe baking dish. Top with the remaining cheese and arrange frozen tater tots on top.

Bake at 375 for 45 minutes, until the tater tots are crispy and the cheese underneath is bubbling.

Serve hot and enjoy!

Substitutions

  • Canned green beans: Canned green beans won't be as crisp as fresh ones, but they can work in a pinch. If using canned, you do not need to saute them ahead time with the onions, simply add them after you finish that step.
  • Frozen green beans: Frozen green beans work great, treat them as you would fresh ones, and I doubt you'll notice the difference.
  • Chicken: If you would like to make this tater tot casserole without beef, you can substitute shredded chicken. Rotisserie chicken would work great. Saute the onions in olive oil at the beginning along with the green beans. Add the chicken when you add in the rest of the casserole ingredients.
  • Make it vegetarian: I understand a lot of people are looking for a vegetarian green bean and tater tot casserole. You can totally omit the ground beef if you would like, add in a can of rinsed black beans or a second can of corn if you would like to bulk up the dish.

Double the Casserole Recipe

This is one of those recipes that takes a bit of prep work, but doubling the recipe is easy, it does not take much more time, and this casserole is a great freezer meal to have on hand for another night. Simply double everything and prepare in two separate oven safe dishes, one to bake now and one to freeze and bake later.

Can you freeze tater tot casserole?

Sure can! This makes a GREAT freezer meal. Prepare the casserole per the instructions apart from baking in the oven. Cover tightly with foil and freeze for up to several months. This would make a great option for a freezer meal that doesn't have tomatoes, as so many casseroles commonly do.
