Chicken Salad Chick Fancy Nancy

Chicken Salad Chick's Fancy Nancy is a classic chicken salad with a creamy mayo base and delicious add-ins like crunchy pecans, apples, and sweet red grapes.

Chicken Salad Chick is well known for their delicious chicken salads and unique flavors. Some of their most popular are Chicken Salad Chick Classic Carol Chicken Salad and Dixie Chick Chicken Salad Chick Copycat Recipe.

The Fancy Nancy is one their top sellers as well. With it's delicious taste, it's easy to see why. This chicken salad makes the perfect addition to any brunch or lunch menu. Serve alongside crackers, lettuce, or croissants for a tasty, high protein meal.

Ingredients

  • Chicken tenderloins: This gives a really nice tender chicken base which sets this chicken salad apart from others. You can also use boneless skinless chicken breast or even rotisserie chicken or canned chicken, but the flavor won’t be quite the same.
  • Duke's mayo: This is key for an accurate copycat version, as it’s what the restaurant uses! 
  • Celery: Minced finely so that there are no big pieces.
  • Fruit: A combination of fuji apples and red grapes.
  • Pecans: You can buy chopped pecans or whole pecans and chop them yourself. 
  • Seasoning blend: A mixture of salt, pepper, onion powder, and garlic powder to mimic the restaurant's secret spice blend. A bit of ranch seasoning as well.

How to make Chicken Salad Chick's Fancy Nancy at home

Step 1. In a medium pot, bring water to a boil. Add chicken tenderloins and cook for around 8 minutes. As soon as they’re cooked through (165°F) remove from the water and allow to cool.

Add cooked chicken to a food processor and pulse until finally shredded.

Step 2. To a large mixing bowl, add shredded chicken, mayonnaise, minced celery, diced apple, sliced grapes, chopped pecans, and seasonings.

Step 3. Mix well until everything is incorporated.

Step 4. Refrigerate before serving.

Recipe tips

  • Refrigerate for at least a couple hours, ideally overnight for best taste.
  • Duke's Mayo is key for the authentic Chicken Salad Chick taste.

Storage

Store any leftover chicken salad in an airtight container in the fridge for up to five days. To freshen the salad up, you can add 1 tablespoon of mayonnaise and mix when serving leftovers.
