This broccoli salad requires only a few ingredients to make and can be prepared in less than ten minutes. It is perfect to bring for a brunch or potluck, or to have meal prepped for the week.
Chicken Salad Chick is well known for their chicken salads (of course), but this broccoli salad is also a very popular menu item. It features broccoli florets tossed with a creamy dressing, salty bacon bits, and fresh shredded cheese.

Ingredients

- Broccoli: This recipe uses fresh broccoli that has been quickly blanched. This means it is dropped into boiling water for just a minute and then shocked in ice water to immediately stop the cooking process.
- Shredded Cheese: A mix of both shredded cheddar and shredded mozzarella.
- Bacon: Leftover bacon from breakfast is perfect for this recipe. I don’t suggest using bacon bits. There are so few ingredients in this dish, you’ll want everything to be best quality.
- Mayonnaise: As with all of my Chicken Salad Chick copycat recipes, you are going to want to use Duke’s Mayo. That’s the brand the restaurant uses.
- Vinegar: I like to use apple cider vinegar because of the slight sweetness it has along with the acidity.
- Sugar: Just a tablespoon for sweetness. If you prefer, you can use maple syrup or honey.
How to Prepare

Step 1. Chop broccoli into bite size pieces.
In a medium sized pot, boil water. Once boiling, add in chopped broccoli pieces. Cook for 1 minute.
Once the 1 minute is up, immediately, using a slotted spoon, remove the broccoli and place in a large bowl filled with ice water to shock it and stop the broccoli from cooking any more. Use a slotted spoon to remove broccoli to a paper towel lined bowl to the side to help remove excess water.

Step 2. To a mixing bowl add apple cider vinegar and sugar and whisk to dissolve sugar.

Step 3. Add mayonnaise, salt, and pepper.

Step 4. Whisk to combine.

Step 5. Add blanched broccoli pieces, crumbled bacon, and shredded cheese.

Step 6. Stir to combine. Refrigerate for 30 minutes before serving.
Recipe Tips
- Blanch the Broccoli. This ensures that it keeps its crunch but it tones down the “raw” flavor. It also brightens the color of the broccoli to a nice fresh green.
- Let sit for 30 minutes in the refrigerator before serving. This allows all of the flavors to work together.
