Chicken Salad Chick Broccoli Salad

Ingredients

  • 4 cups broccoli florets
  • cup mayonnaise
  • 4 bacon strips cooked and crumbled
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 2 tbsp. sugar
  • 2 tbsp. apple cider vinegar
  • 1 tsp. salt
  • 1 tsp. pepper

Instructions

  • Chop broccoli into bite size pieces.
  • In a medium sized pot, boil water. Once boiling, add in chopped broccoli pieces. Cook for 1 minute.
  • Once the 1 minute is up, immediately, using a slotted spoon, remove the broccoli and place in a large bowl filled with ice water to shock it and stop the broccoli from cooking any more. Use a slotted spoon to remove broccoli to a paper towel lined bowl to the side to help remove excess water.
  • To a mixing bowl add apple cider vinegar and sugar and whisk to dissolve sugar.
  • Add mayonnaise, salt, and pepper. Whisk to combine.
  • Add blanched broccoli pieces, crumbled bacon, and shredded cheese. Stir to combine. Refrigerate for 30 minutes before serving.
