Whip up a Popcorn Chicken Bowl at home! These Copycat KFC Famous Bowls have a bed of creamy mashed potatoes, topped with breaded chicken, corn, cheese, and gravy for an easy five ingredient lunch or dinner that everyone will enjoy.

Who remembers the KFC famous bowl? It is a classic from the fried chicken restaurant and one of their most popular items. In fact, even when they discontinued popcorn chicken as a separate menu item, they kept these bowls because they are so well loved!

Easily make this semi homemade version of a KFC popcorn chicken bowl by using frozen breaded popcorn chicken and leftover mashed potatoes. You can also buy store bought mashed potatoes if you would like to make it even easier on yourself.

These popcorn chicken bowls are cozy comfort food and ultra nostalgic. They are great any time of year but especially lovely during the fall and winter months when you want something to warm you right up.

Ingredients

While you can make this as homemade as you like, I am sharing a simple, whip together in just a few minutes version, using mostly store bought items. Here's what you'll need.

Mashed Potatoes- Leftover mashed potatoes are perfect here, if you have them. Otherwise store bought, refrigerated mashed potatoes work too. Here's an easy recipe for Mashed Potatoes in the Instant Pot. 

Popcorn Chicken- I like Bare Chicken brand or Kirkland brand for this, as the ingredients are pretty minimal. They are both pretty crispy when cooked in the air fryer, especially. 

Gravy- A gravy packet or a jar of gravy. Brown gravy is traditional but beef, chicken, or even turkey gravy would all work well.

Corn- Canned corn and frozen corn both will work, just make sure they are well drained before adding to the bowl. If you are lucky enough to have midwestern sweet corn like us, trying freezing corn off the cob for recipes such as this one. 

Shredded Cheese- Monterey Jack or shredded cheddar both taste delicious. 

How to Assemble

Step 4.

Cook chicken pieces according to the packaging instructions. Prepare gravy according to the packaging instructions or reheat already made gravy.

Divide warm mashed potatoes among bowls or plates.

Top with cooked chicken, shredded cheese, warm corn, and warm gravy.

Recipe Tips

If you have an air fryer, I suggest cooking the chicken pieces using that to get them extra crispy.

If you are making dishes that use gravy or mashed potatoes and have extra, simply freeze them for later use. They make recipes like this one a breeze and are great way to repurpose leftovers.

  • 20 oz. popcorn chicken pieces prepared according to the packaging
  • 6 cups mashed potatoes
  • ½ cup shredded cheddar cheese
  • 1 cup frozen corn thawed
  • 1 packet brown gravy prepared
