Chicken Potato Broccoli Casserole

Chicken Potato Broccoli Casserole is a must try family dinner that is easy, cheesy, and comforting. Made with simple, whole ingredients, this all in one baked dinner is satisfying and flavorful.

Do you ever have one of those meals that you take the first bite and are immediately excited about how good it tastes? That was me when I first created this recipe!

We love casseroles in our house, and I wanted to create one using baby potatoes as a base, simply because they are something we always keep on hand. They are filling and easy to store, and they keep fresh for a decent amount of time.

This chicken broccoli potato casserole recipe is SO easy to make. It is filling and well balanced (perfect for hungry families and big eaters), and the seasoning is simple but ultra delicious using a dry ranch packet. 

This dish is cheesy, gooey, and satisfying, You are going to be going up for seconds (or thirds!)

Ingredients

  • Chicken- Boneless skinless chicken breasts, tenderloins, or thighs. I used tenderloins cut into bite-sized pieces.
  • Fresh Broccoli Florets- You can use frozen, but I prefer fresh as they get less watery when baked in the oven.
  • Potatoes- This recipe uses baby potatoes but into fourths or sixths. You can use bigger potatoes as well and simply cut them up in a medium dice.
  • Shredded Cheese- I like Monterey Jack or cheddar cheese. Shred it yourself if you have time!
  • Dry Ranch Packet- I like the one from Simply Organic, but any will work.
  • Green Onions- Green onion gives a softer onion flavor but still adds a lot to the dish! 
  • Garlic- Around 4 medium sized cloves.
  • Sour Cream and Mayo- This helps everything come together for an ultra creamy, rich casserole. I have also used greek yogurt as a sour cream substitute. 

How to Make Chicken Potato Broccoli Casserole

Step 1. Preheat oven to 375 degrees F. In a large mixing bowl, add cut up potatoes, chicken pieces, and broccoli florets.

Step 2. Add mayo, sour cream, paprika, ranch packet, minced garlic, chopped green onions, and shredded cheese, leaving out ½ cup of shredded cheese for sprinkling over top of the dish.

Step 3. To a glass baking dish, contents of the mixing bowl, and use a spatula to smooth it out.

Step 4. Sprinkle remaining shredded cheese on top and place into preheated oven. Bake for 35-40 minutes, or until potatoes are soft and chicken is cooked through.

Recipe Tips

  • Shred the cheese yourself for best melting.
  • The potatoes do not need to be precooked for this potato chicken broccoli casserole, just make sure to dice them small enough that they cook through at the same pace as the chicken.

Storage

Store any leftovers in the fridge in an airtight container for up to 4 days.

This dish reheats really well in the microwave for 45 seconds to 1 minute or in a small pan on the stove for 1-2 minutes. We love this for leftover lunches!

Ingredients
  

  • 1 ½ lbs. chicken breast or tenderloins cut into bit sized pieces
  • 3 cups broccoli florets broken up into small pieces
  • 1 lb. red potatoes diced
  • 1 ½ cups shredded cheese
  • ¼ cup mayonnaise
  • ½ cup sour cream
  • 1 dry ranch seasoning packet 1.5 oz.
  • 4 garlic cloves minced
  • ½ tbsp. paprika
  • 4 green onions chopped

Instructions
 

  • Preheat oven to 375 degrees F.

    I made this casserole for the first time tonight and it was absolutely delicious! It ended up taking 55 minutes before the potatoes were cooked through, but that’s probably just my finicky oven.
