- 1 ½ lbs. chicken breast or tenderloins cut into bit sized pieces
- 3 cups broccoli florets broken up into small pieces
- 1 lb. red potatoes diced
- 1 ½ cups shredded cheese
- ¼ cup mayonnaise
- ½ cup sour cream
- 1 dry ranch seasoning packet 1.5 oz.
- 4 garlic cloves minced
- ½ tbsp. paprika
- 4 green onions chopped
Preheat oven to 375 degrees F.
In a large mixing bowl, add cut up potatoes, chicken pieces, and broccoli florets.
Add mayo, sour cream, paprika, ranch packet, minced garlic, chopped green onions, and shredded cheese, leaving out ½ cup of shredded cheese for sprinkling over top of the dish.
To a glass baking dish, contents of the mixing bowl, and use a spatula to smooth it out.
Sprinkle remaining shredded cheese on top and place into preheated oven.
Bake for 35-40 minutes, or until potatoes are soft and chicken is cooked through.
