French Onion Soup Meatballs

Savory ground beef meatballs pan-seared and then oven baked in a delicious caramelized onion sauce. Serve over butter noodles or a bed of creamy mashed potatoes.

PREP TIME: 10 MIN

– 1– 1 lb. ground beef – one half cup breadcrumbs – one fourth cup milk – one half teaspoon salt – 2 tablespoon fresh parsley, chopped – 1 egg – one fourth cup onion, finely diced – 1 cup shredded swiss cheese – 1 tbs. olive oil – 3 large onions, sliced – 1 teaspoon salt – 1 ½ cups beef stock – ½ teaspoon garlic powder – 2 tbs. butter

COOK TIME: 60 MIN

INGREDIENTS

Step 1

Combine meatball ingredients, including ground beef in a large bowl. Form into golf-ball sized meatballs.

Step 2

Heat olive oil in a skillet on medium heat. Add meatballs and cook until they are brown all around. Place to the side.

In that same skillet, add butter and onions. Allow onions to brown a bit  and then add the salt. Continue cooking until caramelized.

Preheat oven to 375 degrees.

Add beef stock and garlic powder to the onions and stir. Place meatballs back in and top with cheese.

Step 6

 Finish the dish in the oven until the cheese is melted and the meatballs are cooked through.
