I have to admit, I have never been a true green bean casserole fan. It wasn't so much that I disliked it, there's just so many great dishes for Thanksgiving, that I always found myself choosing other things over it. Now that I have found this Paula Deen Green Bean Casserole recipe, I don't see that being the case any more! This is the best green bean casserole-- it is flavorful and delicious, and perfect for the holidays.

What makes Paula Deen's casserole so special?
- Two kinds of onions. This recipe calls for two kinds of onions, the traditional crispy fried onions you see in many green bean casseroles and diced onions. This really helps flavor the dish. Instead of placing the fried onions on top when baking, they are mixed in with the green bean mixture.
- Fresh mushrooms. I am a HUGE mushroom fan, so I love that they are in this casserole. It reminds me of a spinach and rice casserole with mushrooms that I make and love. I know that mushrooms aren't everyone's cup of tea, but if you do like them, I highly suggest you try it! They add a great meaty flavor to the dish. Paula's recipe calls for sliced fresh mushrooms, but you could also substitute canned mushrooms.
- Shredded cheese. Shredded cheese makes every baked dish better in my opinion. This green bean cheese casserole has a gooey shredded cheese topping and I'm all for it.
- Cooking green beans in chicken stock. This step is new to me! I haven't seen it done before, but it totally makes sense. In this cheesy green bean casserole fresh green beans are used. Because the final product is only baked for a little while, you boil the fresh green beans in chicken stock until they get a little softer and also take on the flavor of the broth. After cooking the beans, I strained the stock into another container to save for soup. That way, it didn't go to waste!

- can of cream of mushroom soup
- chicken broth
- sliced green beans
- fresh mushrooms
- diced onions
- butter
- grated cheddar cheese
How to Make Green Bean Cheese Casserole
The first step is to prep your green beans. Paula's recipe calls for sliced fresh green beans. I only had whole, so that's what I used (I just cut them into bite-sized pieces).
Place your chicken stock in a small saucepan on medium heat and allow it to come up to a boil.
While the chicken stock is heating up, slice your mushrooms and dice your onion.
Melt butter in a saute pan and add in mushrooms and onions. Saute for 5 minutes.
Boil green beans in chicken broth for ten minutes to par cook them and infuse them with the flavor from the broth. Drain the broth from the green beans.
To the mushrooms and onions, add cream of mushroom soup, french fried onions, green beans and house seasoning. Stir to combine.
Transfer to an oven safe dish and top with grated cheese. Bake at 350 degrees for at least 10 minutes (or until cheese is melted and bubbly).
How to make Paula Deen's House Seasoning
This is a super simple blend of ingredients that I am sure you have in your spice cabinet. Paula deen's house seasoning is comprised of salt, pepper, and garlic powder. The ratios to make Paula Deen's house seasoning are 1 tsp. salt, ¼ tsp. pepper, ¼ tsp. garlic powder. You can make however much you like, just keep that 1/.25/.25 ratio.
You will use the house seasoning in this paula deen recipe for green bean casserole, but I suggest keeping it on hand. It would be a great addition to almost any savory dish, from soups, to sauces, to other casseroles.
Can You Freeze Green Bean Casserole
Yes! Make up the entire pan including the cheese and cover tightly with foil. Freeze, making sure it is kept flat so that it doesn't shift around. Reheat from frozen for 40-45 minutes, or until it is cooked through. I suggest freezing it an aluminum pan, so that there is no risk of your glass dish breaking when you go from freezer to oven.
