Zuppa Toscana (Spicy Sausage and Kale Soup)

Ingredients

  • 1 lb. italian sausage hot or mild
  • 1 tbsp. butter
  • 1 medium onion diced
  • 6 cloves garlic minced
  • 1 lb. potatoes any variety, sliced thin
  • 6 cups chicken stock
  • 1 cup heavy cream or half and half
  • 1 tsp. salt
  • 2 cups kale chopped

Instructions

  • In a large soup pot over medium heat, brown Italian sausage and break it up with a wooden spoon. After sausage is brown (about 8 minutes) remove it to a plate.
  • To the same pot, add butter.
  • Add in garlic and onions. Stir and cook until onions are translucent, about 3 minutes.
  • Add sliced potatoes, chicken stock, water, and salt. Bring to a boil and then reduce to a simmer. Cook for 10 minutes.
  • Add chopped kale, cooked sausage crumbles, and heavy creamy and simmer for another 5 minutes, or until the potatoes are fork tender.
