- 1 lb. italian sausage hot or mild
- 1 tbsp. butter
- 1 medium onion diced
- 6 cloves garlic minced
- 1 lb. potatoes any variety, sliced thin
- 6 cups chicken stock
- 1 cup heavy cream or half and half
- 1 tsp. salt
- 2 cups kale chopped
In a large soup pot over medium heat, brown Italian sausage and break it up with a wooden spoon. After sausage is brown (about 8 minutes) remove it to a plate.
To the same pot, add butter.
Add in garlic and onions. Stir and cook until onions are translucent, about 3 minutes.
Add sliced potatoes, chicken stock, water, and salt. Bring to a boil and then reduce to a simmer. Cook for 10 minutes.
Add chopped kale, cooked sausage crumbles, and heavy creamy and simmer for another 5 minutes, or until the potatoes are fork tender.
