Turkey Pesto Sandwich

A twist on a classic turkey sandwich, this Spicy Italian Turkey Pesto Sandwich has sopressata, giardineria, pesto, spinach, and more!

Ingredients

  • 1 large sub roll such as a demi baguette
  • ½ pound turkey breast lunchmeat
  • 4 slices sopressata
  • 4 slices pepperoni large
  • 2 tbsp. basil pesto
  • 2 tbsp. giardiniera chopped fine
  • 3 slices tomato heirloom or roma
  • 4 oz. provolone slices
  • 1 cup fresh baby spinach packed

Instructions

  • Slice bread in half lengthwise.
  • Spread pesto on to the cut side of one of the pieces of bread.
  • Top with meats and cheese.
  • Add spinach, tomato slices, and chopped giardiniera.
  • Finish with other piece of bread and enjoy. This makes enough for two servings.

Notes

Want to make this into a turkey pesto grilled cheese? Simply follow the previous steps and finish it on a panini press for 3-4 minutes until the cheese is melted!
