- 2-3 sweet potatoes medium sized
- 2 tbsp.  avocado oil
- 1 tsp.  paprika
- 1 tsp. garlic powder
- ½ tsp. salt
- ½ tsp. pepper
- Wash and peel sweet potatoes. 
- Cut into ½-inch, relatively uniform pieces. It can be helpful to cut sweet potatoes into matchsticks and then dice from there to keep the pieces the same size. 
- In a large skillet, heat oil over medium heat. Once hot, add sweet potatoes. 
- Stirring frequently to avoid burning, saute sweet potatoes until crisp on the outside and tender on the inside, this will take 15-20 minutes. 
- Add seasoning and give one final stir before serving. 
- A cast iron skillet is great for sauteing sweet potatoes on the stove because it heats well and can hold a lot at once. 
- If you don't have a large enough skillet, you may have to work in batches.
- If your sweet potatoes have soaked up all the oil from cooking, it can be helpful to add a tiny drizzle of additional oil along with the spices at the end to help them stick to the potatoes.
