- 2-3 sweet potatoes medium sized
- 2 tbsp. avocado oil
- 1 tsp. paprika
- 1 tsp. garlic powder
- ½ tsp. salt
- ½ tsp. pepper
Wash and peel sweet potatoes.
Cut into ½-inch, relatively uniform pieces. It can be helpful to cut sweet potatoes into matchsticks and then dice from there to keep the pieces the same size.
In a large skillet, heat oil over medium heat. Once hot, add sweet potatoes.
Stirring frequently to avoid burning, saute sweet potatoes until crisp on the outside and tender on the inside, this will take 15-20 minutes.
Add seasoning and give one final stir before serving.
- A cast iron skillet is great for sauteing sweet potatoes on the stove because it heats well and can hold a lot at once.
- If you don't have a large enough skillet, you may have to work in batches.
- If your sweet potatoes have soaked up all the oil from cooking, it can be helpful to add a tiny drizzle of additional oil along with the spices at the end to help them stick to the potatoes.
