Ingredients

  • 2-3 sweet potatoes medium sized
  • 2 tbsp. avocado oil
  • 1 tsp. paprika
  • 1 tsp. garlic powder
  • ½ tsp. salt
  • ½ tsp. pepper

Instructions

  • Wash and peel sweet potatoes.
  • Cut into ½-inch, relatively uniform pieces. It can be helpful to cut sweet potatoes into matchsticks and then dice from there to keep the pieces the same size.
  • In a large skillet, heat oil over medium heat. Once hot, add sweet potatoes.
  • Stirring frequently to avoid burning, saute sweet potatoes until crisp on the outside and tender on the inside, this will take 15-20 minutes.
  • Add seasoning and give one final stir before serving.

Notes

  • A cast iron skillet is great for sauteing sweet potatoes on the stove because it heats well and can hold a lot at once.
  • If you don't have a large enough skillet, you may have to work in batches.
  • If your sweet potatoes have soaked up all the oil from cooking, it can be helpful to add a tiny drizzle of additional oil along with the spices at the end to help them stick to the potatoes.
