- 1 Egg
- 1 ham slice
- 2 tbsp. shredded Monterey Jack cheese
- ½ tablespoon butter
- 1 thick slice of sourdough bread
- ¼ cup arugula lightly packed
- 2 slices Roma tomato
- pepper to taste
Lightly toast bread in the toaster or oven.
Take bread and slather with a little butter.
Add sliced tomatoes. Sprinkle cheese on top.
Fry up your egg in a bit of butter over medium heat.
Top warm toast with a handful of arugula.
Place fried egg on top, and finish with a slice of ham. Serve with fresh cracked black pepper.
