Open Faced Breakfast Sandwich

This open faced breakfast sandwich is perfect for breakfast or a snack. It's filling and customizable using your favorite breakfast items.

Ingredients

  • 1 Egg
  • 1 ham slice
  • 2 tbsp. shredded Monterey Jack cheese
  • ½ tablespoon butter
  • 1 thick slice of sourdough bread
  • ¼ cup arugula lightly packed
  • 2 slices Roma tomato
  • pepper to taste

Instructions

  • Lightly toast bread in the toaster or oven.
  • Take bread and slather with a little butter.
  • Add sliced tomatoes. Sprinkle cheese on top.
  • Fry up your egg in a bit of butter over medium heat. 
  • Top warm toast with a handful of arugula.
  • Place fried egg on top, and finish with a slice of ham. Serve with fresh cracked black pepper.
