- 4 chicken leg quarters medium sized
- 2 tbsp. ghee melted in the microwave
- ½ tbsp. paprika
- ½ tbsp. onion powder
- ½ tbsp. garlic powder
- 1 tsp. salt
- ½ tsp. pepper
- 1 tsp. italian seasoning
- ½ tsp. chili powder
Preheat oven to 425 F.
In a small bowl, combine paprika, chili powder, italian seasoning, onion powder, garlic powder, salt, and pepper.
Pat chicken quarters down with paper towels to remove excess moisture.
Use fingers to carefully separate the skin from the meat. Do not fully detach, just enough so you can get the seasonings underneath the skin.
Coat chicken fully with melted ghee or oil on all sides.
Liberally sprinkle on seasoning blend and rub under and over the skin, making sure the chicken is fully covered.
Place seasoned chicken quarters on a foil lined baking tray and place in the oven.
Bake for 35-45 minutes, or until the internal temperature reaches 180 F. A digital thermometer works great to test. Allow meat to rest for 5 minutes before serving.
