Ingredients

  • 4 chicken leg quarters medium sized
  • 2 tbsp. ghee melted in the microwave
  • ½ tbsp. paprika
  • ½ tbsp. onion powder
  • ½ tbsp. garlic powder
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 tsp. italian seasoning
  • ½ tsp. chili powder

Instructions

  • Preheat oven to 425 F.
  • In a small bowl, combine paprika, chili powder, italian seasoning, onion powder, garlic powder, salt, and pepper.
  • Pat chicken quarters down with paper towels to remove excess moisture.
  • Use fingers to carefully separate the skin from the meat. Do not fully detach, just enough so you can get the seasonings underneath the skin.
  • Coat chicken fully with melted ghee or oil on all sides.
  • Liberally sprinkle on seasoning blend and rub under and over the skin, making sure the chicken is fully covered.
  • Place seasoned chicken quarters on a foil lined baking tray and place in the oven.
  • Bake for 35-45 minutes, or until the internal temperature reaches 180 F. A digital thermometer works great to test. Allow meat to rest for 5 minutes before serving.
