A healthy greek flatbread loaded with mediterranean toppings and finished with olive oil and lemon for a tasty snack or lunch!

- 2 mini naan breads or greek pita bread
- 2 tbsp. hummus plain or garlic
- ¼ cucumber diced
- ½ cup romaine lettuce chopped
- ¼ cup tomatoes chopped
- ¼ red onion diced
- ¼ cup kalamata olives
- 2 tbsp. feta cheese crumbles
- 1 tbsp. parsley chopped
- ½ lemon juiced
- 1 tbsp. olive oil
Warm mini pitas on a dry cast iron skillet over medium heat. Approximately 30 seconds per side.
Spread hummus across the top of each flat bread
Top with chopped veggies, including cucumber, romaine lettuce, tomatoes, olives, parsley, and onion.
Squeeze on fresh lemon juice and a drizzle of olive oil and enjoy!
