Creamy Garlic Parmesan Zoodles with Shrimp

Ingredients

  • 1 tbsp. olive oil
  • 1 tbsp. butter
  • 3 garlic cloves minced
  • 1 lb. shrimp tails off
  • 2-2 zucchini spiralized
  • 1 tbsp. fresh basil roughly chopped
  • ½ cup heavy cream
  • 1 tsp. salt
  • 1 tbsp. fresh lemon juice
  • ½ cup parmesan cheese
  • red pepper flakes to taste

Instructions

  • In a large skillet over medium heat, heat olive oil. Add shrimp and cook for 5 minutes until the shrimp turn pink, flipping halfway through. Remove shrimp to a plate to the side.
  • Add butter to skillet and allow to melt. Add garlic cooking quickly until the garlic becomes fragrant but do not brown.
  • Pour in heavy cream and stir to combine. Season with a squeeze of fresh lemon juice, salt, red pepper flakes, and parmesan cheese. Simmer for 1-2 minutes.
  • Add in spiralized zucchini and cook for 2 minutes until slightly softened but still firm.
  • Add fresh basil and cooked shrimp. Stir to combine and serve.
