Creamy Garlic Parmesan Zoodles with Shrimp

- 1 tbsp. olive oil
- 1 tbsp. butter
- 3 garlic cloves minced
- 1 lb. shrimp tails off
- 2-2 zucchini spiralized
- 1 tbsp. fresh basil roughly chopped
- ½ cup heavy cream
- 1 tsp. salt
- 1 tbsp. fresh lemon juice
- ½ cup parmesan cheese
- red pepper flakes to taste
In a large skillet over medium heat, heat olive oil. Add shrimp and cook for 5 minutes until the shrimp turn pink, flipping halfway through. Remove shrimp to a plate to the side.
Add butter to skillet and allow to melt. Add garlic cooking quickly until the garlic becomes fragrant but do not brown.
Pour in heavy cream and stir to combine. Season with a squeeze of fresh lemon juice, salt, red pepper flakes, and parmesan cheese. Simmer for 1-2 minutes.
Add in spiralized zucchini and cook for 2 minutes until slightly softened but still firm.
Add fresh basil and cooked shrimp. Stir to combine and serve.
