Tuscan Shrimp

- 1 tbsp. olive oil
- 2 tbsp. butter
- 1 small onion diced
- 4 garlic cloves minced
- 1 lb. raw shrimp peeled or shell-on
- ½ tsp. dried rosemary
- ¼ cup sun-dried tomatoes roughly chopped
- 2 cups spinach roughly chopped
- 1 cup heavy cream
- ¾ cup freshly grated parmesan
In a large skillet, heat butter and olive oil until butter melts. Add in garlic and onions and saute for 2-3 minutes until translucent. Add shrimp and rosemary and cook on medium heat while stirring until the shrimp begin to turn pink, about 5 minutes.
Add in rosemary, chopped sun-dried tomatoes, and spinach. Stir until the spinach begins to wilt. Add cream.
Cook for about 5-10 minutes until the cream thickens and the shrimp finish cooking. Top with parmesan and serve over pasta.
