Tuscan Shrimp

These Tuscan Shrimp are a quick dinner takes close to 20 minutes to prepare, but the rich sauce will have you thinking you're eating at an Italian restaurant!

Ingredients

  • 1 tbsp. olive oil
  • 2 tbsp. butter
  • 1 small onion diced
  • 4 garlic cloves minced
  • 1 lb. raw shrimp peeled or shell-on
  • ½ tsp. dried rosemary
  • ¼ cup sun-dried tomatoes roughly chopped
  • 2 cups spinach roughly chopped
  • 1 cup heavy cream
  • ¾ cup freshly grated parmesan

Instructions

  • In a large skillet, heat butter and olive oil until butter melts. Add in garlic and onions and saute for 2-3 minutes until translucent. Add shrimp and rosemary and cook on medium heat while stirring until the shrimp begin to turn pink, about 5 minutes.
  • Add in rosemary, chopped sun-dried tomatoes, and spinach. Stir until the spinach begins to wilt. Add cream.
  • Cook for about 5-10 minutes until the cream thickens and the shrimp finish cooking. Top with parmesan and serve over pasta.
