- 6 eggs
- 2 tbsp. heavy cream or whole milk
- 2 green onions
- ¼ cup ham
- ½ cup shredded monterey jack cheese
- salt and pepper to taste
In a medium-sized bowl, crack all eggs. Add milk, salt, and pepper. Whisk vigorously until well combined.
In silicone cupcake liners or a silicone egg bite molds, place cheese, ham, and green onions. This recipe makes approximately 8 egg bites, so split the ingredients in eighths between the cups.
With a small ladle (a pyrex measuring cup works well too) pour egg mixture into each cup. Fill each cup about ⅔ of the way full, leaving room for the egg bites to expand as they cook.
Carefully place into the air fryer basket and set the temperature to 360 degrees and a cook time of 10 minutes or until the eggs are set.
To ensure that the topping ingredients are evenly dispersed throughout, open the air fryer and gently stir each egg bite with a spoon at the 5 minute mark.
Once finished, allow to cool slightly and enjoy.
