BBQ Shredded Pork Loin Instant Pot

BBQ Instant Pot Shredded Pork Loin is super simple to make and a great way to enjoy bbq sandwiches for yourself or a crowd.

Ingredients

  • 1 4 lb. pork loin or shoulder
  • 2 tbsp. cajun seasoning
  • 2 tbsp. olive oil
  • ½ cup chicken stock
  • 2 cups BBQ sauce divided

Instructions

  • Cut up pork shoulder into 4 pieces that are approximately the same size. Use your hands to coat meat with the spices. Be sure to wash your hands well, especially before touching your eyes or face!
  • Turn on the Instant Pot saute function and add two tablespoons of olive oil. Once oil is hot, add in the pork pieces and brown on all sides, this should take about 5-7 minutes. Place meat on a plate to the side.
  • Turn off Instant Pot. To the pot add chicken stock and bbq sauce and stir well. Place browned meat back in.
  • Close the lid and cook on High Pressure for 40 minutes. Allow to natural release for 10 minutes, and then quick release the rest of the way.
  • Use forks to shred pork and add in remaining ½ cup of bbq sauce and stir to coat.
