Slow Cooker Cabbage and Bacon

Slow Cooker Cabbage and Bacon is tender and flavorful from being cooked down in the crock pot for an easy cabbage side dish.

Ingredients

  • 1 green cabbage
  • 2 cups chicken stock
  • ½ cup bacon or pancetta
  • 1 onion diced
  • 1 tsp. salt
  • 1 tbsp. apple cider vinegar

Instructions

  • Carefully slice cabbage in half lengthwise. Remove the core from both halves and then slice each half into eighths. Scatter the cabbage pieces in the slow cooker. The cabbage takes up a lot of space before it cooks down, so you will want to use a larger slow cooker. I used a 6 quart slow cooker.
  • Began dicing your onion and bacon (or pancetta). Place into a skillet and cook over medium heat until the bacon is crispy and the onions are translucent.
  • Use a splash of the chicken stock (maybe 2 tbsp.) to deglaze the pan and scrape up any brown bits, as they will be full of flavor.
  • Pour bacon and onion mixture over the top of the cabbage in the crock pot and add the remaining chicken stock, as well as salt and apple cider vinegar.
  • Cook on low for 3-4 hours or high for 2-3. If you want crisper cabbage, cook for less time.
