Ingredients

sweet potatoes

sea salt

Herbes de Provence
Instructions
Preheat oven to 375 and bake sweet potatoes on a cookie sheet for 45 minutes or until you can easily pierce them with a fork.
Let cool long enough to be handled, and then peel off the skins.
Place the potatoes in the bowl of a mixer and add 4 tablespoon of butter cut into chunks. Add salt and herbs.
Mix until everything is combined.
In a buttered baking dish, pour potatoes and then bake at 375 for 10 minutes.
Notes
Prepare these mashed sweet potatoes a day or two ahead of when you want to serve them and warm in the oven at 375 for 20 minutes.
