Ingredients

  • 3 sweet potatoes large
  • 4 tbsp. butter
  • 1 tsp. sea salt
  • 2 tsp. Herbes de Provence

Instructions

  • Preheat oven to 375 and bake sweet potatoes on a cookie sheet for 45 minutes or until you can easily pierce them with a fork.
  • Let cool long enough to be handled, and then peel off the skins.
  • Place the potatoes in the bowl of a mixer and add 4 tablespoon of butter cut into chunks. Add salt and herbs.
  • Mix until everything is combined.
  • In a buttered baking dish, pour potatoes and then bake at 375 for 10 minutes.

Notes

Prepare these mashed sweet potatoes a day or two ahead of when you want to serve them and warm in the oven at 375 for 20 minutes.
