Ingredients

  • 2 bananas
  • 1 tsp. flaky sea salt
  • 1 cup chocolate chips
  • ¼ cup peanut butter
  • 1 tbsp. coconut oil

Instructions

  • Slice bananas into 1-inch pieces and place them on to a clean baking sheet.
  • Top each piece of banana with peanut butter, placing peanut butter on banana in equal amounts. This may get a little messy, so work slowly.
  • Gently place a second banana piece on top of the peanut butter covered banana. Place in the freezer.
  • These have a tendency to move around a bit, so I suggest checking them half way through and making sure they are all lined up.
  • After two hours, check to make sure they are frozen.
  • If the frozen peanut butter banana bites are ready, melt chocolate in the microwave.
  • Remove melted chocolate from the microwave and stir in coconut oil. It will be thinner and glossy.
  • Using a fork, quickly coat each banana bite completely with chocolate. Place coated bites back on to the baking sheet.
  • While the chocolate is still melted, sprinkle with just a tiny bit of flaky sea salt.
  • Place the chocolate covered bites back in the freezer one more time. Freeze for 1 hour.
