Pad Kra Pao (Thai Basil Chicken)

- 1 lb. ground chicken
- 2 tbsp. vegetable oil
- 1 bell pepper small dice
- 1 small onion small dice
- 4 cloves garlic minced
- 10 oz. mushrooms quartered
- 1 tbsp. rice wine vinegar
- ¼ cup soy sauce
- thai chilis or serranos (to spice preference)
- 1 tbsp. fish sauce
- 1 tbsp. sugar
- 1 tbsp. brown sugar
- ½ cup fresh Thai basil leaves thinly sliced
In a large skillet heat olive oil on a medium heat, add in garlic, onions, and thai chilis. Cook until fragrant, about 30 seconds.
Add ground chicken and break up with a wooden spoon.
Once meat has been browning for 5 minutes, add in bell pepper and mushrooms.
In a small bowl mix together rice wine vinegar, soy sauce, fish sauce, and sugars. Add mixture to pan and stir. Cook until meat is cooked through and vegetables are tender, about 5 minutes.
Chiffonade basil and add to chicken mixture. Basil will wilt quickly, about 2 minutes. Give a final stir and serve.
